– Cinnamon
– Nutmeg
– Salt
– Coconut Milk
– Sweet Potato Puree
– Eggs
– Sunflower Oil

- Xantham Gum
- Baking Powder
- Sugar
- Water

Step 1:
Preheat oven to 350F and grease an 8" x 4" metal loaf pan

In a large bowl beat sunflower oil and sugar together.

Mix beaten eggs, sweet potato puree, and water in with the sugar mixture until bright orange.

Mix GF flour, xantham gum, baking powder, salt, cinnamon and nutmeg in medium bowl.

Sift dry ingredients into bowl with wet ingredients until combined well.

Fold in chopped nuts until evenly distributed.

Pour batter into prepared pan and smooth out the top with a spatula.

Bake for 1 hour until golden brown on top.

Cool completely in the pan for at least 10 minutes before removing to continue cooling on a wire rack.
