Let’s face it, I’m kinda on a cookie roll. I want to explore and experiment the many different existing species of cookies, while at the same time, very complicated-looking recipes do put me off. Today I wanted to do something with the little bit of grated coconut leftover from my last (and only) cheesecake baking experience. So, I googled around and found this very simple beginner-standard recipe. Come on, let’s go!
COCONUT BUTTER COOKIES (Makes 1 large tray)
Ingredients:
1) 1 1/4 cups self-raising flour
2) 1/4 teaspoon salt
3) 100g of butter
4) 1/2 cup brown sugar
5) 1/2 cup white sugar
6) 1 egg
7) 1 cup grated cocunut
Steps:
1) Mix the melted butter and brown sugar and white sugars in a medium sized bowl, until sugar is dissolved evenly
2) Beat in the egg until the mixture is light and fluffy
3) Gradually sift in the flour and then mix in the coconut until you achieve homogenous texture
4) Using a teaspoon, grab a teaspoon of batter and roll a small ball using your palms
5) Arrange balls of batter on a greased baking tray until the entire tray is filled
6) Press the balls down slightly with your fingers until they are a littled flattened and look more like cookies than balls
7) Bake at 175 deg cel (medium heat for gas ovens) for around 15 to 20 minutes, or until cookies are hardened and turn a little golden
8) Place cookies on a serving plate and allow to cool for 10 to 15 minutes before serving
