Coffee Pound Cake

Today’s pound cake carries a slight hint of coffee, has a light texture, and is perfect for breakfast.

COFFEE POUND CAKE (Makes 1 medium cake)

Ingredients:

1) 2/3 cup of milk cream
2) 1 1/3 cup of sugar (or less if you prefer it less sweet)
3) 2 cups of self-raising flour
4) 3 eggs
5) 1/2 a cup of warm milk coffee

Steps:

1) Mix the cream and sugar together in a mixing bowl till sugar dissolves
2) Sift in the flour, alternating a bit of self-raising flour with an egg to keep mixture moist
3) Add in the warm coffee and stir well to achieve homogenous texture
4) Pour batter in a greased baking mould
5) Bake in oven at 175 deg cel (medium heat for gas ovens) for 45 – 50 minutes or until a knife comes out clean when stuck into cake

Mix cream and sugar together:

Sift in flour:

Alternating flour with eggs:

Stir well to achieve a homogenous mixture:

Make a half cup of milk coffee:

Add the coffee to the batter:

Stir well to achieve this mixture:

Pour batter into a greased baking mould:

Fresh out of the oven:
