English Tea Scones

Scones… they are absolutely fantastic little bits of heavenly goodness. You can eat them with a side of cream, or some jam, or even with ham and cheese. They are so damn good, you can even eat them on their own! (Sounds like the M&Ms advertisement from eons ago).

Today I asked Juan’s mum to teach me how to make scones, since I had been craving for them for a while already. And here’s her recipe – simple, easy, and quick.

ENGLISH TEA SCONES (Makes 1 large tray)

Ingredients:

1) 300g of self-raising flour
2) 100g of butter
3) 1 egg & 1 yolk
4) 2 soup spoons of milk
5) 4 -5 tablespoons of sugar

Steps:

1) Sift the flour into a mixing bowl
2) Cut the cold butter into small cubes
3) Add the butter cubes to the flour, cutting them into small pieces and mixing with the flour using two knives
4) Once the batter achieves a sand-like texture, add in the egg and the yolk and milk. Mix well.
5) With all the ingredients mixed together, use your hands to compact the dough and knead very gently
6) Spread the dough on a cool flat surface (which has been sprinkled with flour)
7) Flatten the dough till it achieves a 1cm thickness
8) Use a round cookie cutter to cut out circles
9) Place the circles of dough on a greased baking tray
10) Bake in the oven at 190 – 200 deg cel for 15 – 20 minutes or until the scones turn light brown
11) Place of plate to cool for 10 minutes before serving with whipped cream, jam, or plain!

Use round cookie cutter to cut out circles of dough:

Place dough cirles on a greased baking tray:

Fresh out of the oven:
