Candy Corn Cupcakes

INGREDIENTS

INGREDIENTS (for cupcakes) – Sugar – Sunflower oil – Eggs – Vanilla extract – Sour cream – Flour – Xanthan gum  – Baking powder – Salt – Almond milk – Yellow food dye

INGREDIENTS (for frosting) – Egg whites – Sugar – Marshmallow fluff – Orange food dye - Candy corn

Step 1:  Whisk sugar, oil, eggs and vanilla

Step 2:  Add sour cream

Step 3:  Add dry ingredients and milk

Step 4:  Add yellow dye and mix well

Step 5:  Transfer batter to cupcake pan and bake

Step 6:  Dissolve sugar in egg whites

Step 7:  Whisk until fluffy peaks form.

Step 8:  Add marshmallow fluff and vanilla until stiff peaks form.

Step 9:  Reserve some frosting. Add orange food dye to the rest.

Step 10:  Cool cupcakes before frosting.

Step 11:  Frost cupcakes and then top with candy corn.
