Easy Oatmeal Cookies

Oatmeal Cookies INGREDIENTS

Ingredients:  -GF quick cooking oats -GF all-purpose flour -xanthan gum -baking powder -salt -ground cinnamon -ground nutmeg -coconut oil  -sugar -vanilla extract  -egg

Step 1:  Preheat oven to 350F and line a baking sheet with parchment paper or a Silpat sheet.

Step 2:  Whisk well to combine flour, oats, baking powder, salt, cinnamon and nutmeg in a bowl.

Step 3:  In a large mixing bowl, cream the coconut oil and sugar together until light and fluffy.

Step 4:  Add in vanilla and egg to the sugar-oil mixture and mix well.

Step 5:  Add dry ingredients to the bowl with wet ingredients and mix well until you get a sticky cookie dough.

Step 6:   Chill the dough in the freezer for five minutes.

Step 7:   Scoop one tablespoon  of dough and form a golf-sized ball and place on a plate and repeat with rest of dough.

Step 8:   Chill the cookie dough balls in freezer for at least five minutes.  *This step is essential*

Step 9:   Place dough balls on sheet at least two inches apart. Use back of a spatula to flatten them into desired thickness.

Step 10:  Bake until edges are golden brown about fourteen to fifteen minutes.

Step 11:   Allow to cool for two minutes on the sheet and then transfer to wire rack to cool fully.

Tips/Tricks:   *Chill dough before baking to prevent cookies from spreading. *Jazz them up with almonds, raisins, or walnuts!
