Super Easy Peach Cobbler


Ingredients: – Fresh ripe peaches – Water – Sugar – Cornstarch – Lemon juice – Coconut oil – All-purpose flour – Xanthan gum  – Sugar – Baking powder – Salt – Almond milk – Ground cinnamon

Step 1: Preheat oven to 350F and grease a 9×13″ baking dish.

Step 2: If using fresh peaches, core and cut into thin, even slices.

Step 3: Place peach slices, water, sugar and cornstarch in a skillet.

Step 4: Bring to a boil, stirring often. Remove from heat and add lemon juice and coconut oil.

Step 5: Transfer the cooked peaches to previously greased baking dish.

Step 6: In a large bowl, whisk the gluten-free flour, sugar, baking powder, and salt together.

Step 7: Add almond milk and coconut oil and mix until just combined.

Step 8: Spoon the topping evenly over the layer of peach slices. Sprinkle the batter with ground cinnamon.

Step 9: Bake 30 minutes, until the top is golden and the peaches are bubbly. Serve warm, with a side of ice cream or by itself!
