French Toast Casserole


Ingredients: – Gluten-free bread – Chopped pecans – Eggs, beaten – Almond milk – Light brown sugar – Cinnamon – Coconut oil – Dark brown sugar - Shredded Coconut - Honey

Step 1:  Preheat oven and grease baking dish

Step 2:  Cover the bottom of the dish with half of the bread cubes and then sprinkle half of the chopped pecans over the bread. Repeat with the rest.

Step 3:  In a medium bowl, whisk the eggs, almond milk, light brown sugar, and ground cinnamon together to make the custard mixture. 

Step 4:  Pour mixture evenly over the bread chunks.

Step 5:  Mix the melted coconut oil with the brown sugar and cinnamon together until you get a smooth mixture. 

Step 6:  Drizzle evenly over the bread chunks.

Step 7:  Bake the casserole for 35 to 45 minutes until the bread chunks are crunchy and golden brown on top.

Serve & enjoy hot, warm or even cold the next day!!
