Sweet Potato Bread


Ingredients: – Chopped Nuts – Cinnamon – Nutmeg – Salt – Coconut Milk – Sweet Potato Puree – Eggs – Sunflower Oil - Gluten Free Flour - Xantham Gum - Baking Powder - Sugar - Water

Step 1:  Preheat oven to 350F and grease an 8" x 4" metal loaf pan 

Step 2:  In a large bowl beat sunflower oil and sugar together. 

Step 3:  Mix beaten eggs, sweet potato puree, and water in with the sugar mixture until bright orange.

Step 4:  Mix GF flour, xantham gum, baking powder, salt, cinnamon and nutmeg in medium bowl.  

Step 5:  Sift dry ingredients into bowl with wet ingredients until combined well.

Step 6:  Fold in chopped nuts until evenly distributed. 

Step 7:  Pour batter into prepared pan and smooth out the top with a spatula. 

Step 8:  Bake for 1 hour until golden brown on top.

Step 9:  Cool completely in the pan for at least 10 minutes before removing to continue cooling on a wire rack. 

Step 10:  Once cooled completely slice and enjoy!!!!
