Zucchini Muffins

Zucchini Muffins INGREDIENTS

Ingredients:  – Oil – Sugar – Eggs – Almond milk – GF Flour – Flaxseed Meal – Baking Powder – Ground Cinnamon – Grated Zucchini  – Walnuts, chopped

Step 1:  Preheat oven and grease silicon muffin mold

Step 2:  Wash and grate the zucchini, making sure to squeeze out as much liquid as possible

Step 3:  In a large mixing bowl, beat the sugar and oil together to combine.

Step 4:  Add the eggs and milk and whisk well to get a pale yellow mixture.

Step 5:  Whisk dry ingredients until combined.

Step 6:  Combine wet and dry ingredients to get batter.

Step 7:  Fold grated zucchini into batter until distributed.

Step 8:  Divide batter between muffin cups

Step 9:  Sprinkle walnuts over batter.

Step 10:  Bake until muffins are golden brown.
