- tapioca starch
- xanthan gum
- sugar
- ground cinnamon
- ground nutmeg
- salt
- baking powder
- vanilla extract
- pumpkin puree
- almond milk
- maple syrup
- coconut milk

Step 1:
Preheat the oven to 350F and grease a 12-cup standard muffin tin or a silicon muffin mold.

Whisk to combine the flours, starches, xanthan gum, sugar, spices, salt, and baking powder.

In another bowl mix the vanilla, pumpkin, milk, maple syrup, and melted coconut oil.

Pour wet ingredients into bowl with dry ingredients and stir until combined.

Divide batter evenly and fill each cavity until 3/4 full.

Bake for 25-30 minutes or until firm.
