Ingredients:

Sunflower oil Sugar Lemon zest Large eggs, room temperature, beaten Unsweetened almond milk Lemon juice All-purpose gluten-free flour Xanthan gum (optional)  Salt Baking powder Poppy seeds

Step 1: Preheat your oven to 350F. Grease an 8″x4″ metal loaf pan.

Step 2: In a large bowl, mix the oil, sugar and lemon zest until combined.

Step 3: Add in your eggs, almond milk, and lemon juice. Mix this well to get a light pale mixture.

Step 4: In a medium bowl, sift the gluten-free flour, xanthan gum (if using), salt, baking powder, and poppy seeds. Whisk well.

Step 5: Add the flour mixture to the bowl with the wet ingredients. Mix well until just combined.

Step 6: Transfer the batter to the prepared loaf pan and use a wet spatula to smooth out the top.

Step 7: Bake for 40 to 50 minutes until the loaf is golden brown on top. Insert a toothpick in the middle to be sure.

Serve for breakfast or enjoy as a midday snack!
