Super Easy Zucchini Fries 

Ingredients

Ingredients: - Zucchini - Salt for sprinkling - GF breadcrumbs - Nutritional yeast - Granulated garlic - Dried parsley - Salt - Egg - Cooking spray - Olive oil

Step 1: Wash and cut your fresh zucchini into sticks that are 3 to 4 inches in length. Cut them in approximately the same size. This will help make sure they cook in the roughly same amount of time.

Step 2: Lay your cut zucchini on a paper towel and salt. Let them rest for at least 20 minutes. After the 20 minutes, use the paper towel to soak up the extra water.

Step 3: Place your breadcrumbs, nutritional yeast, granulated garlic, dried parsley, and salt together in a bowl.  Mix well.

Step 4: Dip the zucchini in egg and coat with the breadcrumb mixture and make sure all the surfaces are coated well. Repeat until all pieces are breaded.

Step 5: Preheat your air fryer for at least 5 minutes, at 400F. Spray the air fryer basket with cooking spray so the fries don’t stick.

Step 6: Place your zucchini fries in the air fryer in one layer, making sure that they do not touch. Brush them with oil to ensure maximum crisp. 

Step 7: Bake for 15 minutes, turning fries over halfway through. Brush the other side with olive oil. Repeat until you finish cooking all the zucchini fries.

Plate and serve! Use this as an appetizer or snack, with a side of marinara or ranch!
