Easy  Biscotti



- Raw almonds - Eggs, beaten - Baking powder - Almond flour - Gluten-free all   purpose flour - Light brown sugar

Step 1:  Preheat the oven and line a baking sheet with a Silpat or parchment paper.

Step 2:  Roughly chop the almonds into pieces. 

Step 3:  In another bowl whisk the flours, baking soda, and sugar until combined.

Step 4:  Add beaten eggs to dry ingredients and mix well until you get a homogeneous, sticky dough. 

Step 5:  Stir in chopped almonds until they are evenly distributed.

Step 6:  Shape dough in to rectangle shaped flat log. Smooth the top with wet hands or a wet spatula. 

Step 7:  Bake for until firm, remove and cool 10 minutes. Turn oven temp down.

Step 8:  Once cool enough to handle place on cutting board and slice into 1 inch pieces with a sharp knife.

Step 9:  Place cut side down and bake, then flip over and bake for another  until firm and golden brown.

Step 10:  Let the almond biscotti cool completely until serving or storing.
