Super Easy Lemon Curd
- Eggs - Sugar - Lemon Juice - Lemon Zest - Coconut oil
Step 1: Combine the sugar and eggs together in a large microwave-proof bowl. Whisk well. Add the lemon juice, zest, and melted coconut oil together and mix well.
Step 2: Cook the mixture on high heat in the microwave for 1-minute intervals, from 3 to 7 minutes. Mix well until it's thick and coats the back of the spoon.
