Easy  Pumpkin Muffins



- brown rice flour - sorghum flour - cornstarch - tapioca starch - xanthan gum - sugar - ground cinnamon - ground nutmeg - salt  - baking powder - vanilla extract - pumpkin puree - almond milk - maple syrup - coconut milk

Step 1: Preheat the oven to 350F and grease a 12-cup standard muffin tin or a silicon muffin mold.

Step 2: Whisk to combine the flours, starches, xanthan gum, sugar, spices, salt, and baking powder. 

Step 3: In another bowl mix the vanilla, pumpkin, milk, maple syrup, and melted coconut oil. 

Step 4: Pour wet ingredients into bowl with dry ingredients and stir until combined.

Step 5: Divide batter evenly and fill each cavity until 3/4 full.

Step 6: Bake for 25-30 minutes or until firm.

Step 7: Allow to cool for 10 minutes before removing from mold and another 10 minutes cooling on a rack.
