Easy Sugar  Cookies

Ingredients: - Gluten-Free     All-Purpose Flour - Baking Powder - Salt - Sugar - Xanthan Gum - Coconut oil - Egg - Vanilla Extract

Step 1:  Pre-heat oven and line a large baking sheet with a silpat or parchment paper.

Step 2:  In a medium bowl, combine flour, xanthan gum (if using),  salt,  and baking powder together.

Step 3:  In a large bowl, whisk sugar and oil together until you get a light a creamy mixture.  

Step 4:  Add the beaten egg and vanilla extract and whisk well to get a smooth light brown liquid mixture.

Step 5:  Add the flour mixture to the large bowl with wet ingredients and mix well until a soft dough is formed. Chill for five minutes in the freezer.

Step 6:  Once dough is chilled scoop a heaping teaspoon of dough and roll into a ball between the palms of your hands. Place them on a plate and chill in freezer for five minutes.

Step 7:  Place the sugar in a small bowl and roll each dough ball in the sugar until completely coated on all sides. 

Step 8:  Place the balls on a plate and chill for five minutes in freezer.

Step 9:   Once chilled, place in a single layer on baking sheet at least three inches apart.

Step 10:   Bake until the edges are very lightly golden brown, rotating the sheet halfway through.

Step 11:   Let cool on sheet before transferring to a wire rack to cool completely.
