Pumpkin Cheesecake



- Pumpkin Puree - Almonds  - Cashews - Sugar - Coconut Oil - Ground cinnamon - Ground nutmeg - Salt - Agar Agar - Almond Milk - Water

Step 2:  Process almonds to a fine meal then mix with melted coconut oil, sugar, and cinnamon.

Step 1:  Grease and line a 7" Springform Pan with Parchment Paper 

Step 3:  Form the crust and let it set in the freezer for 30 miutes.

Step 4:  Prepare filling by processing soaked cashews, pumpkin puree, almond milk, sugar, and spices. 

Step 5:  Dissolve agar agar with 1/4 cup of water before adding to blender filling mixture.

Step 6:  Pour filling into pan and let freeze for at least 2-3 hours in freezer or 4-6 hours in refrigerator. 

Step 7:  Garnish with a couple of pecans before slicing and serving.
