Unlike many gluten-free blondies that can turn out dry or crumbly, these blondies stay moist thanks to almond flour, which adds natural richness and tenderness without needing any gluten.

Recipe Notes + Substitutions:
- Almond Flour: I recommend using blanched almond flour (which are blanched almonds without their skins on that have been processed into a fine flour) for the best texture, as opposed to almond meal (which are whole almonds with their skins that have been processed into a meal).
- Eggs: Eggs are necessary for binding the ingredients together and giving these blondies the chewy texture.
- Butter:Â I used dairy-free butter to keep this recipe dairy-free. However, if you are not lactose-intolerant, go ahead and use regular unsalted butter instead.
- Sugar: I used a mix of both brown sugar (which creates the classic butterscotch-like flavor blondies are known for) and white sugar. However, you can also substitute the white sugar with cane sugar, or coconut sugar if you prefer.
- Vanilla Extract: I like using vanilla extract to add extract flavor, so I definitely recommend adding it in.
- Baking Powder: Baking powder is the only leavening agent used for raising the batter in this almond flour blondie recipe, so definitely make sure to add it in. If you are Celiac or gluten-intolerant, make sure to use certified gluten-free baking powder.
- Chocolate Chips: I used dairy-free chocolate chips to keep this recipe dairy-free, but if you are not lactose-intolerant, feel free to use regular chocolate chips instead.
- Pecans: Adding chopped pecans gives these blondies some crunch for contrast in texture. Alternatively, you can also use other types of chopped nuts, such as walnuts, maccadamia nuts, almonds, or pistachios.
How to Make Almond Flour Blondies:
Whisk Sugar & Wet Ingredients:Â In a large mixing bowl, combine the brown sugar, granulated sugar, melted dairy-free butter, vanilla extract and eggs. Whisk until the mixture is smooth and well combined.
Add Dry Ingredients:Â Add the blanched almond flour, baking powder, salt, dairy-free chocolate chips and chopped pecans (setting aside some chocolate chips and pecans for topping). Mix until all the ingredients are fully incorporated.
Transfer Batter to Baking Pan: Line 9 x 9 inch baking pan with parchment paper for easy removal. Pour the batter into the prepared baking pan and spread it evenly with a rubber spatula until you get an even layer.
Sprinkle Chocolate Chips & Pecans:Â Sprinkle the reserved chocolate chips and pecans over the top of the blondie batter.
Bake Until Golden: Bake in the preheated oven at 350F (175C) for 30 minutes. If the top of the blondies starts browning too much, loosely tent the baking dish with aluminum foil.
Cool Before Slicing:Â Allow these chewy gluten-free blondies to cool completely in the pan before slicing and serving.
Dish by Dish Tips:
- Use Finely Sifted Almond Flour: Make sure to use finely sifted almond flour for the smoothest texture. I do NOT recommend using almond meal, which contains almond skins, and will create a denser, grainier texture.
- Underbake Slightly: To create a fudgy texture, you’ll want to make sure to underbake the blondies slightly. The center should still look slightly underbaked when you first take it out of the oven (the blondies will still continue cooking with the residual heat while they cool).
- Cool Completely: The almond flour blonde brownies are delicate fresh out of the oven, so make sure to let them cool completely to set.

- 2 1/2 cups blanched almond flour
- 2 eggs
- 1/2 cup unsalted dairy-free butter (1 stick), melted
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup dairy-free chocolate chips
- 1/2 cup chopped pecans
