People think that because I write a food blog, I must necessarily have an entire repertoire of recipes hidden in some trick pocket up my sleeve.
I’m sorry to disappoint you, but the truth is that I don’t.
Of course, there are days that having a varied menu comes easily to me.
But then there are also days (and trust me, so many days) during which I’m frustrated and find myself facing a blank wall when it comes to thinking up of new, healthy recipes that I’d actually want to eat.
When that happens, my natural instinct is to sift through online food blogs food websites, hoping for a small sparkle of inspiration.
Sometimes I get really lucky and easily stumble on a recipe I find myself drooling over; but other days the overdose of choices actually makes me shrink back in horror and I find myself even more frustrated than ever.
It was during one of those latter-kind of days, when I was about to throw up my hands in defeat, when it occurred to me to try making these easy beef skewers.
You see, I had the idea of making beef skewers a while back, but somehow just never got about to making them. By some thankful God-sent miracle, in my desperate moment of “what are we gonna eat for dinner tonight??” these beef skewers came floating right into my brain.
I’d made these beef skewers right after laboring over Juan’s birthday cake – the wild berry cheesecake which left my arm aching for days because I’d insisted on making it despite the lack of an electric beater or a food processor.
At that point, the last thing I wanted to do was to spend more time making elaborate food.
So these beef skewers saved the night. Just like Superman saved Lois Lane.
They’re incredibly easy – all the preparation required is to cut the raw tenderloin beef and bell peppers into small cubes of roughly the same size, then poke a stick through beef and bell pepper squares alternatively – and super quick – all that you need is about 5 minutes on the grill, or until the beef has reached the point you like best. Sprinkle some salt and pepper over to taste and then you’re done.
Best of all, I loved the fact that it was protein and vegetables in a single easy and healthy meal.
One that didn’t require any unnecessary carbohydrates but tasted ridiculously good anyway.
I loved the sweet and tangy taste of the grilled bell peppers intertwined with rich juicy beef.
I adored the bright yellows with the fiery reds from the bell peppers, a flash of bright green from parsley garnish in contrast with gorgeous deep browns of the meat.
It was pleasure for the eyes and pure comfort for our stomachs.
Easy, quick and healthy…Can it get any better than that?
BEEF & BELL PEPPER SKEWERS
(Serves 2 as a main, or 6 as a side)
Ingredients:
1) 1 kg of raw tenderloin beef
2) 1 red bell pepper
3) 1 yellow bell pepper
4) 1 small red onion
5) Salt and pepper to taste
6) Around 15 wooden sticks
7) A few sprigs of fresh parsley, for garnish (optional)
Steps:
1) Cut the raw tenderloin beef into small cubes
2) Cut bell peppers and red onion into small squares roughly the same size as the beef cubes
3) Soak wooden sticks into water for about 10 minutes so they don’t burn on the grill
4) For every skewer, you will need about 3 beef cubes, 2 bell pepper squares and 2 onion squares. Thread a wooden stick through the beef cubes and bell pepper and onion squares
5) Pre-heat grill over medium heat for a few minutes, then rub with some fat from the beef
6) Grill skewers over medium heat until beef has reached the point you like
7) Garnish with a few sprigs of parsley, if you like

This looks great. Have to try it sometime. I’ve made something similar but used green peppers, then added onions and cherry tomatoes. Less beef but more vegetables.
Beg your pardon, I just noticed you already had the onions, though I used yellow sweet onions instead of red, it’s a small difference. =)

I have always love the way you presented all your dishes in your blog. No matter how simple or complex your food recipes may be, the end result of your cooking which is the “dish” had always been attractively presented. I learnt in cooking class that a dish may be very simple but if you present it well (i.e. with bright colors and appropriate garnishes), it can look very appetizing and people will want to eat it! I suppose, making food look pretty is something I love to do, and for those few extra minutes spent to make it look nicer, it makes me want to eat it more! So it’s completely worth the extra time, effort and extra bucks (buying fresh garnish like parsley or chives!). Love you too!!!
