Tasty, Flavorful Tacos
It’s almost Cinco de Mayo, friends!
And I think eating plenty of tacos is the perfect way to celebrate this holiday (don’t you think?)
Today we’ll be in indulging in quesabirria tacos, which are basically corn tortillas stuffed with tender flavorful birria beef and a whole load of melted cheese… then garnished with diced onions and fresh chopped cilantro.
I’m salivating just thinking about it!

Recipe Notes + Substitutions:
- Tortillas: I used yellow corn tortillas, but white corn tortillas will work too (learn how to make your own homemade corn tortillas)!
- Birria Beef & Sauce: Here’s how to make the birria beef and sauce.
- Cheese: I used shredded mozzarella cheese, but you can use any other type of melty cheese that you enjoy. If you are lactose-intolerant, go ahead and use dairy-free mozzarella cheese instead.
- Toppings: I recommend using diced onions and fresh chopped cilantro for topping (but go ahead and swap out the cilantro for parsley, spring onions or chives)!
How to Make Birria Tacos (Step by Step):
1. Brush Tortillas with Sauce
Brush both sides of the corn tortilla with birria sauce.
2. Heat Tortilla and Top with Fillings
Heat oil in a skillet and lay out the corn tortilla. You can add extra sauce. Place half a cup (or slightly less) of birria beef on one half of the tortilla.
Place shredded mozzarella cheese (about 4 tablespoons) on the other half of the tortilla. Sprinkle with chopped cilantro and onion.
3. Fold Tortilla
Carefully place the cheese tortilla half over the beef half. Cook for another minute.
4. Flip Tacos
Flip the quesabirria tacos to the other side and cook for another minute.
5. Serve and Enjoy
Serve these cheesy birria tacos with extra sauce, as well as diced onions and cilantro.

- 4 corn tortillas
- 3 tablespoons oil, for frying
- 1 cup birria sauce
- 2 cups birria beef
- 1 cup shredded mozzarella cheese
- 3 tablespoons chopped fresh cilantro
- 4 tablespoons diced onions
Instructions
- Brush Tortillas with Sauce: Brush both sides of the corn tortilla with birria sauce.
