Tasty Chicken Cordon Bleu: Crispy Outside, with a Delicious Filling

For those who haven’t tried chicken cordon bleu before, it’s basically a classic dish made with chicken breast wrapped around ham and cheese, then coated in breadcrumbs and cooked until crispy on the outside and tender on the inside.

Although the dish is associated with French cooking, its modern chicken version is generally considered a Swiss-inspired preparation influenced by schnitzel-style cooking. The name “cordon bleu” translates to “blue ribbon” in French and is associated with excellence.

Traditional cordon bleu recipes often use regular breadcrumbs made with wheat (which contain gluten), but making this gluten-free chicken cordon bleu is straightforward: simply use gluten-free breadcrumbs and check that the other ingredients are gluten-free too.

Looks great for fancy dinners, but easy enough to enjoy on busy weeknights too!

Why You’ll Love This Recipe:

  • Simple Ingredients: The main ingredients needed for making this gluten-free version of chicken cordon bleu are easily accessible at the local grocery store (nothing fancy required!).
  • Easy to Make: While it may look and sound fancy, this recipe is actually very simple. All you need to do is season the chicken, fill with ham and cheese and then roll it up before chilling and coating it with breadcrumbs.
  • Crispy Outside, Juicy Inside: I just love the contrast with the crispy gluten-free panko breading and the tender chicken interior with the delicious ham and cheese filling.
  • Totally Gluten-Free: The best part is that these crispy chicken roll-ups are 100% gluten-free, which means that even those with Celiac disease or gluten intolerances can enjoy them without issues!

Recipe Notes + Substitutions:

  • Chicken: Traditionally these chicken roll ups are made with chicken breasts, so make sure you use boneless skinless chicken breasts.
  • Mustard: Dijon mustard is most commonly used, but you can also use other types of mustard if you prefer.
  • Gruyere Cheese: I used sliced Gruyere cheese, but sliced Swiss cheese or provolone would work too.
  • Breadcrumbs: To keep this recipe gluten-free, I’ve used gluten-free panko breadcrumbs. If you are not Celiac or gluten-intolerant, go ahead and use regular panko bread crumbs instead.
  • Parmesan Cheese: Adding grated parmesan cheese to the breadcrumb coating adds flavor and color to the baked coating.
  • Honey: I used honey for sweetening the honey mustard sauce. Feel free to reduce the amount of honey if you prefer a less sweet sauce.
  • Lemon Juice: I recommend using freshly-squeezed lemon juice for the best flavor. Lemon juice adds a brightness to the sauce that goes well with the chicken.

Dish by Dish Tips:

  • Pound Chicken Evenly: For best results, make sure to use a mallet to pound the chicken breast fillets evenly so the chicken cooks consistently.
  • Don’t Overfill: Stuffing the chicken with too much filling makes it more difficult to seal once rolled and increases chances of leakage. Keep a small border of chicken around the filling before rolling.
  • Press Breadcrumbs into Chicken: Make sure to press the gf panko breadcrumbs gently against the meat to help them adhere well to the chicken.
  • Seasoning Options: If you want more flavor in the breading, you can add a pinch of garlic powder or onion powder too.
