Description

This dutch oven pot roast is the ultimate comfort food! Made with tender, slow-braised beef, hearty potatoes and carrots, and a rich homemade gravy, this classic one-pot meal is perfect for a cozy family dinner. Naturally gluten-free and dairy-free too.

Ingredients

Units Scale
  • 2 pounds beef chuck roast (or beef brisket)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 onion, roughly chopped
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 3/4 cup dry red wine
  • 1 1/2 cups beef broth
  • 4-6 sprigs fresh thyme
  • 1 pound baby potatoes
  • 2 carrots, cut into large chunks
  • 2 celery stalks, cut into large pieces

Instructions

  1. Season Beef: Pat the beef chuck roast dry with paper towels and season generously on all sides with salt and pepper.
  2. Sear Beef: Heat the oil in a Dutch oven over high heat. Sear the beef for 3 to 4 minutes per side, until deeply browned all over. Transfer to a plate.
  3. Sauté Onions, Garlic & Tomato Paste: Reduce the heat to medium and add the diced onions to the pot. Cook for 4 to 5 minutes, scraping up the browned bits. Stir in the minced garlic and tomato paste and cook for 1 to 2 minutes, until the paste darkens.
  4. Add Red Wine & Simmer: Pour in the red wine and simmer for 2 to 3 minutes, scraping the bottom of the pot.
  5. Add Beef, Broth & Thyme: Return the beef to the pot. Add the broth and thyme. The liquid should come about halfway up the sides of the beef.
  6. Braise: Preheat the oven to 300F (150C). Cover the Dutch oven and braise for 2 hours.
  7. Add Veggies & Cook Some More: Arrange the halved potatoes, carrots and celery around the beef. Cover and return to the oven for another 1 1/2 hours, until the beef and vegetables are fork-tender.
  8. Let Rest then Pull Apart: Remove the thyme. Let the beef rest for 10 to 15 minutes, then slice or pull apart and serve with the vegetables and pan juices.

Notes

Beef: For best results, I recommend using beef chuck roast or beef brisket, as the marbling in the meat breaks down into tender juicy meat after the low and slow braising process. I do NOT recommend leaner cuts such as sirloin as the meat tends to dry out after cooking.

Olive Oil: I used extra virgin olive oil, but you can also use other types of vegetable oil if you prefer (such as canola oil, sunflower oil, etc.)

Onion: I used yellow onions, but white onions or red onions will work too.

Garlic: Garlic adds a beautiful fragrance and aroma, so definitely make sure to include it.

Tomato Paste: Tomato paste (which is way more concentrated than tomato sauce) adds a rich sweetness and dark red color to the gravy, so definitely make sure to add it in.

Red Wine: I recommend using a dry red wine with good body and acidity, which will add depth to the braising liquid and balance out the richness of the beef. You can use cabernet sauvignon, merlot, or a more full-bodied syrah. If you don’t take alcohol, feel free to leave it out and replace it with more broth instead.

Broth: You can use either beef broth or beef stock. If you are Celiac or gluten-intolerant, make sure to use certified gluten-free beef broth.

Thyme: I used thyme, but you can also other herbs such as rosemary if you prefer.

Vegetables: I’ve used carrots, baby potatoes, and celery. You can also add in some parsnips if you prefer.
