Ingredients
Honey Garlic Soy Marinade:
- 4 tablespoons gluten-free soy sauce (or coconut aminos if you're allergic to soy)
- 2 tablespoons honey
- 1 tablespoon minced garlic
- 1 tablespoon fresh lemon juice
Cilantro Lime Marinade:
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon ground paprika
- 1/2 teaspoon granulated garlic
- 1/3 teaspoon salt
- 1/2 teaspoon ground coriander
- Fresh cilantro to taste
Italian Herb Marinade:
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon ground paprika
- 1/2 teaspoon garlic powder
- 1/3 teaspoon salt
Instructions
Honey Garlic Soy Marinade:
- Combine Ingredients: In a small bowl, combine garlic, honey, lemon juice, and gluten-free soy sauce. Taste and adjust for sweetness or saltiness.
- Marinate Chicken: Pour the honey garlic soy marinade into a zip-lock bag, add 1 pound of boneless skinless chicken breasts or chicken thighs, seal, and shake gently. Refrigerate for 2–3 hours before cooking.
Cilantro Lime Marinade:
- Combine Ingredients: Chop cilantro. Add all ingredients into a jar with a lid. Shake well until fully mixed.
- Marinate Chicken: Pour the cilantro lime marinade into a zip-lock bag, add 1 pound of boneless, skinless chicken breasts or thighs, mix to coat, seal bag and refrigerate for 2-3 hours before cooking.
Italian Herb Marinade:
- Combine Ingredients: Place all ingredients in a jar. Close the lid tightly and shake well until everything is fully combined.
- Marinate Chicken: Pour the Italian herb marinade into a zip-lock bag, add 1 pound boneless skinless chicken thighs or chicken breasts and coat well, seal bag and marinate in the fridge for 2–3 hours before cooking.
Notes
Amount of Chicken: Each marinade is meant of approximately 1 pound of chicken. So increase the amount accordingly depending on how much chicken you’ll be cooking.
Marinating Time: I suggest marinating the chicken for at least 2 hours, or even up to overnight if you have time, so the chicken really absorbs the flavors.
