Banana Bread Muffins Ingredients: - Gluten-Free All-   Purpose Flour - Baking Powder - Salt - Sugar - Xanthan Gum - Banana - Eggs - Walnuts - Sunflower Oil

Step 1: Pre-heat oven to 350F (175C) & Place rack in center.  Grease a  12-cup standard muffin mold

Step 2: Cut bananas into small pieces and mash with the back of a fork.

Step 3: Roughly chop the walnuts with a knife.

Step 4: Whisk flour, Xanthan gum (if using), salt, and baking powder together.

Step 5: In large bowl beat the oil and sugar until combined.

Step 6: Add the beaten eggs and mashed bananas; mix well to incorporate.

Step 7: Sift and mix dry mix into wet until you get a homogeneous batter.

Step 8: Fold in 1/2 cup of walnuts and mix gently.

Step 9: Divide batter evenly and top with remaining walnuts.

Step 11: Let muffins cool in mold for 5 min before removing onto rack.
