Ingredients: - Gluten-Free All-    Purpose Flour - Baking Powder - Spices - Sugar - Xanthan Gum - Molasses - Coconut Oil - Egg

Step 1:  Pre-heat oven to 350F (175C) and line two large baking sheets with silpats or parchment paper.

Step 2:  Cream half a cup of the sugar with coconut oil until light and fluffy.  

Step 3:  Add the beaten egg and molasses to the oil and sugar mixture.

Step 4:  Whisk flour, Xanthan gum, salt, spices, and baking powder together.

Step 5:  Add dry ingredients to wet ingredients; mix very well scraping down sides of bowl until you get a thick homogeneous dough.

Step 6:  Scoop a heaping teaspoon of dough and roll into a ball between the palms of your hands. Place them on a plate.

Step 7:  Place the remaining sugar in a shallow bowl and roll the cookie balls in the sugar until coated.

Step 8:  Place each on prepared baking sheet and press down slightly with your fingers.

Step 9:  Bake in preheated oven for fifteen minutes; remove from oven and cool on sheet for two minutes before moving them to cool completely  on a wire rack.
