Ingredients:
- Gluten-Free All-
Purpose Flour
- Baking Powder
- Spices
- Sugar
- Xanthan Gum
- Molasses
- Coconut Oil
- Egg

Step 1:
Pre-heat oven to 350F (175C) and line two large baking sheets with silpats or parchment paper.

Cream half a cup of the sugar with coconut oil until light and fluffy.

Add the beaten egg and molasses to the oil and sugar mixture.

Step 4:
Whisk flour, Xanthan gum, salt, spices, and baking powder together.

Step 5:
Add dry ingredients to wet ingredients; mix very well scraping down sides of bowl until you get a thick homogeneous dough.

Step 6:
Scoop a heaping teaspoon of dough and roll into a ball between the palms of your hands. Place them on a plate.

Step 7:
Place the remaining sugar in a shallow bowl and roll the cookie balls in the sugar until coated.

Place each on prepared baking sheet and press down slightly with your fingers.

Bake in preheated oven for fifteen minutes; remove from oven and cool on sheet for two minutes before moving them to cool completely on a wire rack.
