Soft Pumpkin Cookies



- gluten free flour - xanthan gum - sugar - ground cinnamon - ground nutmeg - ground ginger - salt  - baking powder - vanilla extract - pumpkin puree - egg - maple syrup - coconut oil

Step 1:  Beat sugar, oil, pumpkin, egg, and vanilla in large bowl.

Step 2:  Whisk flour, baking powder, salt, cinnamon, nutmeg, and ginger.

Step 3:  Combine wet and dry ingredients to form a dough.

Step 4:  Cover dough with plastic wrap and chill for 30 minutes.  This step is very important for handling of the dough!

Step 5:  Preheat oven to 350F and line 2 cookie sheets with silpats or parchment paper.

Step 7:  Flatten the dough balls using a wet spatula to your desired thickness as they will not expand much.

Step 8:  Bake for 13-15 minutes.

Step 9:  Cool at least 10 minutes on cookie sheet before moving to a wire rack to cool completely.
