Looking for a better-for-you gluten-free biscuit that doesn’t compromise on texture? These fluffy almond flour biscuits are grain-free, low-carb, and perfect for a keto lifestyle. Light, tender, and easy to make, they’re a wholesome upgrade to a classic favorite, all without the gluten or dairy.
Ingredients
- 1 1/2 cups blanched almond flour
- 1/3 cup dairy-free cream cheese
- 1 egg
- 2 teaspoons baking powder
- A pinch of salt
Instructions
- Preheat & Line: Preheat the oven to 350F (175C) and line a large baking sheet with parchment paper.
- Mix Cream Cheese & Egg: In a bowl, combine the dairy-free cream cheese and egg. Mix well until smooth and fully incorporated.
- Add Dry Ingredients: Add the blanched almond flour, baking powder and salt. Mix until a soft dough forms. The texture should be slightly sticky, neither too firm nor too runny.
- Scoop Dough onto Baking Sheet: Using a #20 scoop or a large spoon, portion the biscuit dough onto the prepared baking sheet.
- Bake Until Golden: Bake the biscuits in the preheated oven at 350F for 15 minutes until the biscuits are golden brown.
- Let Cool: Remove the freshly baked almond flour biscuits from the oven and let them cool on a wire rack slightly before serving.
Notes
Almond Flour: Make sure to use blanched almond flour (blanched almonds processed into a fine flour) as opposed to almond meal (processed whole almonds with their skins on).
Cream Cheese: I used dairy-free cream cheese to keep this recipe dairy-free. If you are not lactose-intolerant, go ahead and use regular cream cheese instead.
Egg: The egg is necessary for binding the ingredients together, so make sure you don’t leave it out.
Baking Powder: Baking powder is the only leavening agent that helps the biscuit dough rise. If you are Celiac or gluten-intolerant, make sure to use certified gluten-free baking powder (and ideally aluminium-free baking powder too).
Optional Add-Ins: You can add shredded dairy-free cheddar or mozzarella cheese, or dried herbs (such as dried rosemary, dried thyme, or garlic powder) for extra flavor.
Shaping: Make sure to lightly dampen the spoon or your hands to prevent the biscuit dough from sticking.
Sweet version: You can add a little erythritol or monk fruit sweetener for a touch of sweetness.
