Delicious Low-Carb Biscuits – Tender & Fluffy!

Unlike regular biscuits, we’re not using wheat flour. Instead, we’re using blanched almond flour to make these.

Thanks to the almond flour, these biscuits are moist, soft and pillowy, making them the perfect base for spreading creamy butter on top, or eating them with gravy. You would never know that these are free of gluten and dairy too, or that they are low-carb!

Best of all, you can make them in less than 30 minutes, which means that if you start now, you can enjoy fluffy homemade biscuits in no time at all!

Recipe Notes + Substitutions:

  • Almond Flour: Make sure to use blanched almond flour (blanched almonds processed into a fine flour) as opposed to almond meal (processed whole almonds with their skins on).
  • Cream Cheese: I used dairy-free cream cheese to keep this recipe dairy-free. If you are not lactose-intolerant, go ahead and use regular cream cheese or Greek yogurt instead.
  • Egg: The egg is necessary for binding the ingredients together, so make sure you don’t leave it out.
  • Baking Powder: Baking powder is the only leavening agent that helps the biscuit dough rise. If you are Celiac or gluten-intolerant, make sure to use certified gluten-free baking powder (and ideally aluminium-free baking powder too).

How to Make Almond Flour Biscuits:

Mix Cream Cheese & Egg: In a large mixing bowl, combine the dairy-free cream cheese and egg. Mix well until smooth and fully incorporated.

Add Dry Ingredients: Add the blanched almond flour, baking powder and salt. Mix until a soft dough forms. The texture should be slightly sticky, neither too firm nor too runny.

Scoop Dough onto Baking Sheet: Line a baking sheet with parchment paper. Using a #20 scoop or a large spoon, portion the biscuit dough onto the prepared baking sheet.

Bake Until Golden: Bake the biscuits in the preheated oven at 350F (175C) for 15 minutes until the biscuits are golden brown. Remove the freshly baked almond flour biscuits from the oven and let them cool slightly on a wire rack slightly before serving.

  • Optional Add-Ins: If you wish to add more flavor to these gluten-free biscuits, you can use shredded dairy-free cheddar or mozzarella cheese, or dried herbs (such as  dried rosemarydried thyme, onion powder or garlic powder) for extra taste.
