Description
These gluten-free buffalo wings are easy and big on flavor – baked instead of fried, the crispy chicken wings are then tossed in a deliciously buttery hot sauce. Serve with crunchy celery sticks and ranch dressing for an amazing game day appetizer or party snack. Totally dairy-free too.
Ingredients
- 2 pounds chicken wings, cut into drumsticks and wings
- 1/2 teaspoon salt
- 1 teaspoon ground paprika
- 1 teaspoon granulated garlic
- 1 tablespoon baking powder
- 4 tablespoons dairy-free butter
- 5 tablespoons gluten-free hot sauce
- 1 tablespoon light brown sugar
Instructions
- Pat Chicken Dry: Pat dry the chicken wings thoroughly with paper towels.
- Prepare Seasoning Mixture: In a bowl, mix the salt, ground paprika, granulated garlic and baking powder.
- Toss Wings in Seasoning: Add the chicken wings to the bowl and toss until evenly coated.
- Preheat and Line: Preheat the oven to 360F (180C). Line a large baking sheet with parchment paper.
- Place Wings on Baking Sheet: Place the seasoning wings in a single layer on the prepared baking sheet. Bake for 25 minutes.
- Flip and Bake Some More: After the first 25 minutes, flip the wings over and bake for another 25 minutes. Remove the wings from the oven once baked.
- Prepare Buffalo Sauce: Prepare the sauce by mixing the melted dairy-free butter with the gluten-free hot sauce and brown sugar until smooth.
- Toss Wings in Sauce: Toss the wings in the buffalo sauce until fully coated. Serve with garlic sauce or blue cheese dip.
Notes
Chicken: Make sure to pat the chicken dry as that will ensure a crispier texture.
Seasonings: I used a mixture of ground paprika and granulated garlic for flavor, but you can use other types of seasonings too (such as ground black pepper or onion powder).
Baking Powder: Baking powder is a key ingredient in achieving crispy baked chicken (the baking powder draws moisture out of the chicken skin, ensuring that it crisps better and browns more evenly) so make sure you don’t leave it out. If you have Celiac disease or gluten intolerance, make sure to use gluten-free baking powder.
Butter: I used dairy-free butter to keep this recipe dairy-free. However, if you are not lactose-intolerant, go ahead and use regular butter instead.
Hot Sauce: Hot sauce is a key ingredient in making the buffalo wings sauce. I used gluten-free hot sauce to keep this recipe gluten-free, but if you are not gluten-intolerant, go ahead and use regular hot sauce instead.
Brown Sugar: I added a bit of light brown sugar for a hint of sweetness to contrast with the heat from the hot sauce. Alternatively, you may also use white sugar or cane sugar if that’s what you have. Feel free to reduce the amount of sugar or leave it out completely if you prefer.
