Here’s a slightly healthier version of buffalo wings – because instead of deep frying the chicken, we’re baking them till they get crispy (thanks to a secret ingredient!), before tossing them in a homemade gluten-free and dairy-free buffalo sauce.

- Seasonings: I used a mixture of ground paprika and granulated garlic (or garlic powder) for flavor, but you can use other types of seasonings too (such as ground black pepper or onion powder).
- Baking Powder: Baking powder is a key ingredient in achieving crispy baked chicken (the baking powder draws moisture out of the chicken skin, ensuring that it crisps better and browns more evenly) so make sure you don’t leave it out. If you have Celiac disease or gluten intolerance, make sure to use gluten-free baking powder.
- Butter: I used dairy-free butter to keep this recipe dairy-free. However, if you are not lactose-intolerant, go ahead and use regular butter instead.
- Hot Sauce: Hot sauce is a key ingredient in making the buffalo wings sauce. I used gluten-free hot sauce (Frank’s Red Hot Sauce) to keep this recipe gluten-free, but if you are not gluten-intolerant, go ahead and use regular hot sauce instead.

How to Make Gluten-Free Buffalo Wings (Step by Step):
Toss Wings in Seasoning Mixture
Pat Chicken Wings Dry: Pat dry the chicken wings thoroughly with paper towels.
Prepare Seasoning Mixture:Â In a large bowl, mix the salt, ground paprika, granulated garlic and baking powder.
Toss Wings in Seasoning Mixture:Â Add the chicken wings to the bowl and toss until they are evenly coated with the seasoning mixture.
Place Wings on Baking Sheet: Preheat the oven to 360F (180C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup. Place the seasoning wings in a single layer on the prepared baking sheet.
Bake Until Golden Brown
Bake on One Side:Â Bake the wings in the preheated oven at 360F (180C) for 25 minutes.
Flip and Bake on the Other Side: After the first 25 minutes, flip the chicken wings over and bake for another 25 minutes. Remove the wings from the oven once baked and place chicken wings on a wire rack while you prepare the sauce.
Toss Baked Wings in Homemade Gluten-Free Buffalo Sauce
Prepare Buffalo Sauce:Â Prepare the sauce by mixing the melted dairy-free butter with the gluten-free hot sauce and brown sugar until smooth.
Toss Baked Wings in Sauce:Â Toss the crispy baked wings in the homemade gluten-free buffalo sauce until fully coated. Serve the gluten-free buffalo chicken wings with garlic sauce or blue cheese dip.

- 1/2 teaspoon salt
- 1 teaspoon ground paprika
- 1 teaspoon granulated garlic
- 1 tablespoon baking powder
- 4 tablespoons dairy-free butter
- 5 tablespoons gluten-free hot sauce
- 1 tablespoon light brown sugar
