Description
These easy chocolate quinoa crisps only require 3 simple ingredients and 5 minutes of prep, and you’ve got a deliciously decadent chocolate dessert in almost no time at all! Totally gluten-free and can easily be made dairy-free too!
Ingredients
- 12 ounces semi-sweet chocolate, chopped
- 2 tablespoons butter
- 1 1/2 cups puffed quinoa cereal
Instructions
- Combine Chocolate and Butter: Combine the chopped semi-sweet chocolate and butter in a microwave-safe bowl.
- Melt Chocolate and Butter: Heat the chocolate and butter in 4-5 times in the microwave in 30-second increments, mixing well with a fork until you get a smooth and thick chocolate mixture.
- Fold in Puffed Quinoa: Fold in the puffed quinoa until it is evenly distributed in the chocolate mixture.
- Transfer to Baking Dish: Line a deep baking pan with parchment paper and transfer the chocolate-quinoa mixture to the pan. Use a spatula to spread out the mixture to get 1-inch thickness.
- Chill Until Set: Chill in the freezer for at least 30 minutes (or in the refrigerator for 2 hours) until the chocolate is set.
- Cut into Pieces: Once set, cut the chocolate vertically into long pieces, before cutting horizontally into smaller pieces.
- Serve and Enjoy: Serve these chocolate quinoa crisps and enjoy!
Notes
Chocolate: I used semi-sweet chocolate, but if you prefer these chocolate quinoa crunch bites to be less sweet, go ahead and swap it out with dark chocolate instead. Alternatively, if you are lactose-intolerant, go ahead and use dairy-free chocolate (vegan chocolate) instead.
Butter: I used regular butter, if you are lactose-intolerant, you can also use coconut oil or dairy-free butter instead.
Puffed Quinoa Cereal: I used store-bought puffed quinoa cereal (sometimes also known as ‘quinoa pop’). Alternatively, if you may also use other types of cereal if you prefer.
Storing: To store, place these chocolate quinoa crunch bites in an airtight container and store in the refrigerator for up to 2 weeks.
