The Easiest 3-Ingredient Dessert!

I’ve made 3 batches of these chocolate quinoa crisps in just one week, and literally everyone who’s tried them has asked for the recipe (especially when I tell them it’s just three simple ingredients)!

The combination of rich chocolate and airy, crunchy puffed quinoa cereal in one single bite means you get your chocolate fix without feeling like you’re eating too much sugar…which is a big winner in my book!

Sort of like chocolate bark, just cut into smaller bite-sized pieces, and with an incredible crunchy texture that keeps you asking for more. The perfect quick snack or sweet treat in my opinion.

We brought a big container of these when visiting Juan’s extended family last weekend, and devoured these crunchy chocolate treats in almost no time.

Recipe Notes + Substitutions:

  • Chocolate: I used semi-sweet milk chocolate, but if you prefer these chocolate quinoa crunch bites to be less sweet, go ahead and swap it out with dark chocolate instead. Alternatively, if you are lactose-intolerant, go ahead and use dairy-free chocolate (vegan chocolate) instead.
  • Butter: I used regular butter, if you are lactose-intolerant, you can also use coconut oil or dairy-free butter instead.
  • Puffed Quinoa Cereal: I used store-bought puffed quinoa cereal (sometimes also known as ‘quinoa pop’). Alternatively, if you may also use other types of cereal if you prefer.
  • Storing: To store, place these chocolate quinoa crunch bites in an airtight container and store in the refrigerator for up to 2 weeks.

How to Make Chocolate Quinoa Crisps (Step by Step):

Melt Chocolate

A square of butter on top of chocolate pieces in bowl.
Combine Chocolate and Butter: Combine the chopped semi-sweet chocolate and butter in a microwave-safe bowl.
Mixing melted chocolate in bowl.
Melt Chocolate and Butter: Heat the chocolate and butter in 4-5 times in the microwave in 30-second increments, mixing well with a fork until you get a thick but smooth consistency.

Fold in Puffed Quinoa Cereal

Chocolate quinoa pop mixture in bowl.
Fold in Puffed Quinoa: Fold in the crispy quinoa pops until they are evenly distributed in the chocolate mixture.
Using spatula to smooth out chocolate quinoa mixture in baking pan.
Transfer to Baking Dish: Line a deep baking pan with parchment paper and transfer the chocolate quinoa mixture to the baking sheet. Use a spatula to spread out the mixture to get 1-inch thickness.

Chill and Set Before Cutting

Chocolate-covered quinoa pops in parchment-lined pan.
Chill Until Set: Chill in the freezer for at least 30 minutes (or in the refrigerator for 2 hours) until the chocolate is set. You’ll know that the chocolate is set when the surface is matte instead of glossy.

Cut into Pieces: Once set, cut the chocolate-covered puffed quinoa vertically into long pieces, before cutting horizontally into smaller pieces.

Dish by Dish Tips/Tricks:

  • Let Chocolate Set Before Cutting: It’s important to let the chocolate fully set before cutting it into pieces (if the chocolate hasn’t fully set, it’ll melt when cutting and you’ll get melted chocolate all over your fingers, although that’s a problem that can easily be solved!).
  • No Microwave, No Problem: If you don’t own a microwave, you can also melt the chocolate using the double boiler method.
  • Make Chocolate Quinoa Crunch Bars: If you prefer, you can also cut the chocolate-coated quinoa into bars instead of bite-sized pieces.
  • Additional Opt-Ins: If you like the combination of chocolate and salt, you can add in a pinch of flaky sea salt. Or for extra crunch, mix in pumpkin seeds, sunflower seeds, or other types of seeds you enjoy.
  • Use Other Types of Cereal: If you don’t have puffed quinoa cereal (also known as “quinoa pop”), feel free to use other types of puffed cereal such as rice Krispies for this crunchy treat.
