Cilantro Egg Fried Brown Rice

Description

A mixture of cooked brown rice, egg omelette slices and fresh cilantro, stir-fried to form a quick and easy side dish.


Ingredients

  • 1 cup of uncooked brown rice
  • 2 cups of water
  • 4 eggs, beaten
  • 1/2 cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. In a medium pot, combine uncooked brown rice with water and bring to a boil
  2. Once water begins boiling, reduce heat to medium-low, and cover, then let cook for 20 to 25 minutes (or until rice is fully cooked and slightly soft)
  3. In the meanwhile, beat eggs and pour in a lightly-oiled skillet over medium-heat to make an omelette (about 3 to 4 minutes)
  4. Cut omelette into very small pieces
  5. When rice is cooked, drain the water and stir-fry rice in a large skillet or wok with a tablespoon of cooking oil
  6. Throw in the omelette pieces and fresh cilantro and mix well until ingredients are evenly distributed
