Description
A mixture of cooked brown rice, egg omelette slices and fresh cilantro, stir-fried to form a quick and easy side dish.

- 1 cup of uncooked brown rice
- 2 cups of water
- 4 eggs, beaten
- 1/2 cup fresh cilantro, chopped
- Salt to taste
Instructions
- In a medium pot, combine uncooked brown rice with water and bring to a boil
- Once water begins boiling, reduce heat to medium-low, and cover, then let cook for 20 to 25 minutes (or until rice is fully cooked and slightly soft)
- In the meanwhile, beat eggs and pour in a lightly-oiled skillet over medium-heat to make an omelette (about 3 to 4 minutes)
- Cut omelette into very small pieces
- When rice is cooked, drain the water and stir-fry rice in a large skillet or wok with a tablespoon of cooking oil
- Throw in the omelette pieces and fresh cilantro and mix well until ingredients are evenly distributed
