Cilantro lime rice with curried shrimp – this is a super simple recipe for cilantro lime rice with fresh, citrus flavors with great taste and color, accompanied with juicy sauteéd curried shrimp.
This past weekend the weather dropped drastically – so much so that it’s just better to be indoors as much as we possibly can.
Today, when I ordered my usual hot green tea at Starbucks, I shivered and said to the barista, “It’s soooo cold today.” She looked at me matter-of-factly and stated, “Winter is coming.”
For that split second, it felt like we were in a scene with Ned Stark from Game of Thrones, preparing for battle and the long impending winter, and I hoped so hard that winter wouldn’t come quite that soon.
I’ve never been a fan of the cold; I was born in Singapore and 25 years on the tropical island nation has ingrained the love for warmth deep inside me.
I grew up in Southeast Asia, where most countries barely have seasons apart from hot and humid versus rainy and humid. Even after 5 years of living in Buenos Aires, which experiences all four seasons, I am still very much inclined towards toasty warm days and bright summer sunshine, as opposed to grey wintry skies and sharp bone-piercing chills.
We’ve somehow slipped into the end of November – and the festive holiday season makes me wish I was surrounded with friends and family – and while I’m less homesick this week than last, I still miss the tropical Southeast Asian climate and my loved ones.
In moments like these, when I feel simply too far from home, comforting Asian food is somehow the miraculous cure for homesickness. And what better way to feel closer to Asia than cooking with rice?
Today, I’m sharing a super simple recipe for cilantro lime rice – fresh, citrus flavors with great taste and color; to be eaten with juicy curried shrimp that’s been sautéed in a pan.
The ingredients are simple and easily attainable; and you’ll get a filling meal that can be whipped up in practically no time at all.
And I literally mean it – in less than 30 minutes flat, you’ll have this amazing meal on your table if you start cooking right away!
This holiday season, how about bringing this Asian-inspired dish to your table? It’s different from the usual dishes for Thanksgiving or Christmas, but it’s definitely worth it’s place on the menu.
This is easy to prepare, quick to assemble and keeps really well. I’m sure your friends and family will love it as much as I do!
