Description
These super easy cucumber roll ups are filled with cream cheese and smoked salmon, making them the perfect appetizer and savory snack for warm summer days. Totally gluten-free with dairy-free option too.
Ingredients
- 1 large English cucumber
- 4 ounces plain cream cheese, softened
- 1 tablespoon fresh dill, chopped (optional)
- 2 tablespoons everything bagel seasoning
- 4 ounces smoked salmon, thinly sliced
Instructions
- Slice Cucumber: Slice the cucumber lengthwise into thin strips using a mandoline or a vegetable peeler.
- Pat Cucumber Slices Dry: Layer the cucumber slices over each other and pat dry with paper towels to get rid of any excess moisture.
- Spread Cream Cheese: Add the cream cheese and spread it out over the cucumber slices.
- Sprinkle Seasoning: Sprinkle a generous amount of everything bagel seasoning over the cream cheese.
- Layer Smoked Salmon: Place smoked salmon on top.
- Roll: Carefully roll up each cucumber strip.
- Chill: Refrigerate for at least 30 minutes to allow the flavors to blend together.
- Slice into Pieces: Before serving, slice the cucumber rolls into bite-sized pieces.

Notes
Cucumber: I used an English cucumber, but you can also use other types of cucumbers if you prefer.
Cream Cheese: Make sure to soften the cream cheese beforehand so it is easier to spread it out. If you are dairy-intolerant, go ahead and use plain dairy-free cream cheese instead.
Seasoning: I like using everything bagel seasoning, but you can use whichever condiments you prefer (such as onion powder, garlic powder, etc).
Smoked Salmon: If you don’t have smoked salmon, smoked trout will work, or if you prefer to make this vegetarian, you can use thinly sliced bell peppers too.
