Cucumber Roll Ups for Summer

Smoked salmon and cream cheese cucumber roll ups that are amazingly simple to prepare, taste fantastic, and look amazingly gourmet.
They’re sort of like cucumber pinwheels – where we replace the tortilla with cucumber slices for a lower-carb option!
Enjoy them as an appetizer at your next summer party! Or you can make these cucumber rolls for light dinners on hot days too.

Recipe Notes + Substitutions
- Cucumber: I used an English cucumber, but you can also use other types of cucumbers if you prefer.
- Cream Cheese: Make sure to soften the cream cheese beforehand so it is easier to spread it out. If you are dairy-intolerant, go ahead and use plain dairy-free cream cheese instead.
- Seasoning: I like using everything bagel seasoning, but you can use whichever condiments you prefer (such as onion powder, garlic powder, black pepper etc).
- Smoked Salmon: If you don’t have smoked salmon, smoked trout will work, or if you prefer to make these cucumber roll-ups vegetarian, you can use thinly sliced bell peppers too.
How to Make Cucumber Roll Ups (Step by Step):
1. Slice Cucumber
Slice the cucumber lengthwise into thin slices using a mandoline slicer or a vegetable peeler.
2. Pat Cucumber Slices Dry
Layer the cucumber slices over each other and pat dry with paper towels to get rid of any excess moisture.
3. Spread Cream Cheese
Add the cream cheese and spread it out over the cucumber slices.
4. Sprinkle Seasoning
Sprinkle a generous amount of everything bagel seasoning over the cream cheese.
5. Layer Smoked Salmon
Place the smoked salmon on a single layer on top of the cream cheese layer, and sprinkle fresh dill leaves evenly over the salmon.
6. Roll
Carefully roll up the cucumber strips.
7. Chill Rolls
Wrap the salmon cucumber sushi rolls in plastic wrap and refrigerate for at least 30 minutes to allow the flavors to blend together.
8. Slice into Pieces
Before serving, slice the cucumber cream cheese rolls into bite-sized pieces (you should get around 10 pieces).
9. Serve and Enjoy

- Chill Before Serving: These cucumber rolls are best served chilled, so only remove them from the refrigerator just before serving (especially during the hot summer days!).
- Make it Vegetarian: If you prefer to keep these rolls vegetarian, simply replace the smoked salmon with fresh sliced bell peppers or other veggies of choice.
- Make it Dairy-Free: If you are lactose-intolerant, make this recipe dairy-free by using plain non-dairy cream cheese. Alternatively, you can also swap out the cream cheese and use traditional hummus, red pepper hummus or baba ganoush (roasted eggplant dip) instead.
- Secure with Cocktail Sticks: If you want to make sure that this cucumber appetizer doesn’t unravel, you can poke a toothpick or cocktail stick in the middle of the rolls (which makes it easier for serving at your party table).

Flavor is great but even with drying cucumbers strips on paper towels when rolls they just want to fall apart
