Description
So simple to bring together, these deliciously easy eggplant roll ups are filled with a creamy mixture and rolled in grilled eggplant slices for the perfect savory appetizer! Naturally gluten-free too!
Ingredients
- 2 medium eggplants
- 1/2 cup cream cheese
- 1 cup Greek yogurt
- 1/4 cup olive oil
- 3-4 garlic cloves, grated
- 1/2 cup walnuts, chopped finely
- 1/2 teaspoon salt
- Ground black pepper to taste
- 1/4 cup fresh parsley (finely chopped)
Instructions
- Slice and Salt Eggplants: Wash the eggplants and cut into thin slices.Salt the eggplant and set aside for a few minutes. Use paper towels to soak up any excess moisture.
- Grill Eggplant Slices: Heat a grill pan over high heat, than cook the sliced eggplants on the hot grill, approximately 1-2 minutes per side. Once grilled, set the eggplants aside to cool a little.
- Prepare the Filling: Grate the garlic, chop the fresh parsley and chop the walnuts. Stir in the Greek yogurt and cream cheese and mix well until combined. Add the grated garlic, parsley, walnuts, olive oil, black pepper and salt to taste. Mix well and set aside while you cook the eggplant.
- Assemble the Eggplant Roll Ups: For each slice of eggplant, put a little of the filling and roll the eggplant slice. Repeat until all the eggplant has been used up.
- Garnish and Serve: Arrange the eggplant roll ups on a plate, sprinkle with fresh chopped parsley, chopped walnuts and a drizzle of olive oil.
Notes
Eggplant: Since this is a recipe for eggplant roll ups, eggplants are the star here. However, you may also use zucchini if you prefer a different vegetable.
Cream Cheese: If you are lactose-intolerant, feel free to use a vegan cream cheese instead.
Greek Yogurt: If you are lactose-intolerant, feel free to use a vegan yogurt instead.
Olive Oil: I recommending using extra virgin olive oil for the best flavor (since there are so few ingredients in this recipe, using the best quality ingredients you can get your hands on will really make a difference).
Grated Garlic: Using freshly grated garlic brings out an amazing flavor to the filling. If you don’t have fresh garlic on hand, you may also use store-bought garlic paste instead.
Walnuts: Make sure to finely chop the walnuts unless you prefer a chunkier texture.
Parsley: Fresh chopped parsley adds color and taste, but you may also use chopped chives if you prefer.
