Description
In this gluten-free bruschetta recipe, crunchy toasts are spread with cream cheese and topped generously with a flavorful tomato basil mixture. It’s the perfect party appetizer or savory snack. Totally dairy-free and vegan too.
Ingredients
- 1 gluten-free baguette, sliced to 1-inch thick slices
- 4-5 ripe tomatoes
- 1 cup fresh basil leaves + more for garnishing
- 2 tablespoons olive oil + more for drizzling
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsley
- Salt to taste
- Ground black pepper to taste
- 5 tablespoons plain dairy-free cream cheese (optional)
Instructions
- Preheat: Preheat the oven to 350°F.
- Slice Baguette and Brush with Oil: Slice the gluten-free baguette into evenly sliced pieces of about 1-inch thick. Place the baguette slices on a baking sheet and brush each with olive oil. Place them in the preheated oven for 5-7 minutes until the bread is golden brown and crispy.
- Prepare Tomato Topping: While the bread being toasted in the oven, remove the seeds and from the tomatoes and cut the tomatoes into small even cubes. Finely chop the basil. Combine the cubed tomatoes, chopped fresh basil, dried herbs, salt, and pepper in a bowl and mix well until you get a homogeneous mixture.
- Let Toasts Cool Slightly: Remove the toasted bread from the oven and let it cool slightly.
- Spread Cream Cheese (Optional): If you wish, feel free to spread a thin layer of dairy-free cream cheese on each slice of toasted bread.
- Top with Tomato Basil Mixture: Top with the tomato and basil mixture. Drizzle a little more olive oil over the tomato topping if you wish.
- Serve and Enjoy: Serve the bruschetta immediately to ensure the bread remains crispy.
Notes
Baguette: I used a gluten-free baguette (either store-bought or make your own gf baguette) to keep this recipe gluten-free. Alternatively if you don’t have a baguette, you can also use other types of gluten-free bread. However, if you are not Celiac or gluten-intolerant, go ahead and use a regular baguette instead.
Tomatoes: Make sure to get ripe, red tomatoes that are sweet and juicy. Since there are so few ingredients in this bruschetta recipe, and tomatoes are a key ingredient, get the best tomatoes possible.
Basil: I love the beautiful taste of fresh basil which complements the tomatoes very well. Make sure to add the basil in, it makes a whole world of a difference!
Olive Oil: I recommend using extra virgin olive oil for the best flavor, but you may also use other types of vegetable oil (such as sunflower oil, canola oil, avocado oil, etc.)
Dried Herbs: I like using a mix of dried oregano and dried parsley for extra flavor, but feel free to use whichever dried herbs you like.
Cream Cheese: I used plain dairy-free cream cheese to keep this recipe dairy-free. However, if you are not lactose-intolerant, go ahead and use regular cream cheese instead.
