With tender cauliflower on the inside, and a cripsy golden brown batter on the outside.. these cauliflower bites are big on flavor with the perfect contrast in textures!

Recipe Notes + Substitutions:

  • Cauliflower: Make sure to cut the cauliflower into bite-sized florets so that they can easily be easily. Also, blanching the cauliflower florets in hot water helps to make it tender so it is already pre-cooked before being fried later.
  • Gluten-Free Flour: I recommend using a good-quality gluten-free all-purpose flour blend that is made up of lighter flours/starches (such as rice flour, tapioca starch, corn starch or potato starch). I do NOT recommend using a gf blend that is made up of heavier flours (such as garbanzo bean flour).
  • Spices: I’ve used a combination of garlic powder, smoked paprika, and ground black pepper for flavor. If you like even more heat, go ahead and add a pinch of cayenne pepper too.
  • Eggs: The eggs help to bind the ingredients together, so make sure to use them. Alternatively, if you are allergic to eggs or would simply prefer to keep this recipe vegan or egg-free, you can use an egg-replacer or aquafaba instead.
  • Cornmeal: Cornmeal adds a nice crunchy texture as well as gives these cauliflower wings a lovely golden brown color. Alternatively, you may also use almond flour for a low carb option.
  • Yogurt: I used plain unsweetened dairy-free yogurt to keep this recipe dairy-free. However, if you are not lactose-intolerant, go ahead and use regular plain yogurt instead.
  • Garlic: Fresh minced garlic adds plenty of flavor to this yogurt sauce.
  • Dill: Freshly chopped dill adds flavor and taste to the yogurt dipping sauce. However, feel free to use other types of fresh herbs if you prefer (such as parsley, cilantro, chives, thyme, etc).

How to Make Gluten-Free Cauliflower Wings:

Prepare Dipping Sauce (Optional): In a medium bowl, combine yogurt, dill, garlic, and salt to taste. Mix well and refrigerate while you prepare the cauliflower bites.

Prepare and Blanch Cauliflower Florets: Break the cauliflower into florets. Heat a pot of water until it boils. Add the cauliflower and cook until slightly tender. (TIP: Do NOT overcook the cauliflower).

Prepare Gluten-Free Flour Mixture: In a shallow dish, mix the gluten-free all-purpose flour, spices and salt to taste.

Roll in Flour Mixture: Roll each cauliflower floret first in the gluten-free all-purpose flour mixture.

Coat in Egg: Beat the eggs in a shallow dish and coat in the beaten egg.

Coat in Cornmeal: Finally, coat the egg-dipped cauliflower floret in the cornmeal. Repeat until all the cauliflower is coated.

Fry Until Golden: Heat a deep pan with your choice of frying oil to about 330F. Fry the coated cauliflower pieces on each side for 1-2 minutes or until golden brown.

Garnish and Serve: Place the crispy fried cauliflower wings on a plate, garnish with fresh dill and serve with the chilled yogurt sauce.

  • Swap Cauliflower for Broccoli: Use broccoli florets if you prefer broccoli!
  • Prefer Chicken? If you prefer to eat chicken instead, simply substitute the blanched cauliflower florets with chicken wings.
