Description

This slow cooker ground beef and potato casserole combines savory ground beef, tender potatoes, and a flavorful broth, and is topped with melty cheese for a hearty meal the whole family can enjoy. It uses simple everyday ingredients, and is perfect for busy weeknights when you want a satisfying dinner without spending hours in the kitchen. Gluten-free and dairy-free too.

Instructions

  1. Sauté Ground Beef with Condiments: Heat a large skillet over medium-high heat. Add the ground beef, ground paprika, dried parsley, salt, black pepper, minced garlic and cook, breaking it up with a wooden spoon until browned and fully cooked.
  2. Add Onions: Add the chopped onion and continue cooking for one minute. Remove from heat and set aside.
  3. Slice Potatoes & Carrots: Slice the potatoes into 1/4 inch-thick rounds. Slice the  carrots as well.
  4. Layer Vegetables and Ground Beef: Place a layer of potatoes at the bottom of the slow cooker. Add a layer of the cooked ground beef, followed by some of the sliced carrots. Repeat the layers, finishing with a layer of potatoes.
  5. Pour Half the Broth: Reserve half a cup of the beef broth and pour the remaining amount into the slow cooker.
  6. Whisk Remaining Broth with Cornstarch: In a small bowl whisk the reserved half cup of broth with the cornstarch. Add the cornstarch mixture, distributing it evenly over the ingredients.
  7. Sprinkle Cheese Over: Sprinkle the shredded cheese evenly over the top.
  8. Cook Until Ready: Cover and cook on the “Low” setting for 7 hours or “High” setting for 4 hours, or until the potatoes are completely tender and cooked.
  9. Garnish & Serve: Sprinkle with chopped fresh chives, green onions or parsley, before serving.

Notes

Ground Beef: I used ground beef, but feel free to use other types of ground meat (such as ground turkey, ground chicken or ground pork) if you prefer.

Condiments: For seasoning, I’ve used ground paprika, dried parsley and ground black pepper. Feel free to add other spices if you prefer (such as garlic powder or onion powder).

Onion: You can use white onions, yellow onions or red onions.

Potatoes: Make sure to slice the potatoes uniformly (approximately 1/4-inch thick) so they cook evenly throughout the recipe.

Carrots: Likewise, slice the carrots uniformly so that they cook evenly as well.

Broth: I used beef broth to enhance the flavor of the ground beef. If you are using ground turkey or ground chicken, you can use chicken broth instead.

Cheese: I used shredded dairy-free cheese to keep this recipe dairy-free. However, if you are not lactose-intolerant, go ahead and use your favorite cheese (Cheddar, Monterey Jack, Mozzarella, Colby Jack, etc.)
