Peach Fruit Leather: A Healthy Snack Everyone Will Love

When I was a little girl, I loved chewing on fruit leather (also known as fruit roll-ups). They were an easy grab-and-go sweet snack, perfect for road trips or traveling. It felt like eating fruits and candy at the same time.

Chewy, sweet, and full of fruit flavor, fruit leather is a great healthy after-school treat for kids, especially during the back-to-school season!

I’ve been wanting to share a recipe for homemade fruit leather for the longest time. So as the glorious summer season comes to a close, we’re making homemade peach fruit leather to take advantage of the abundant ripe peaches, so we can enjoy the taste of peaches even as the season ends.

Recipe Notes + Substitutions:

  • Peaches: I used fresh peaches, but frozen peaches will work too.
  • Maple Syrup: I used maple syrup to naturally sweeten the peach puree and keep it vegan, but you can also use agave nectar instead. Alternatively, if you are not vegan, you can use honey instead.
  • Lemon Juice: Fresh lemon juice can add a bit of extra tanginess to the fruit leather.

How to Make Peach Fruit Leather:

Wash, Pit & Cut Peaches: Wash the peaches thoroughly under cold water. Remove the pits and cut the peaches into small pieces. You may peel them if desired (peeling gives a smoother texture, but it’s optional and based on personal preference).

Combine Peaches & Honey in Blender: Place the peach pieces into a high-speed blender or food processor. Add the honey. If you like, you can also add a splash of lemon juice to help preserve color and add a hint of brightness.

Blend Until Smooth: Blend the mixture on high speed until completely smooth and uniform in texture. Pass the fruit puree through a fine-mesh sieve to ensure there are no chunks or unblended pieces left.

Spread Puree on Baking Sheet: Preheat the oven to 175F (80C) and line a large baking sheet with a silicon baking mat (silpat). Pour the puréed peach mixture onto the mat and use a spatula to spread it evenly across the surface.

Let Fruit Leather Cool: Remove the tray from the oven and allow the fruit leather to cool for a few minutes. It should come off the silicone mat easily once cooled slightly.

Cut into Strips and Roll Up: Using a sharp knife or a pizza cutter, slice the fruit leather into long strips about 1–2 inches wide. Roll them up, either on their own or with parchment paper.

Dish by Dish Tips:

  • Use Other Fruit: If you wish, go ahead and substitute the peaches with your favorite fruit (nectarines, plums, apricots, cherries, plums, etc).
  • Use Fine-Mesh Sieve: Make sure to pass the pureed mixture through a fine-mesh sieve to get rid of any large chunks or unblended pieces.
  • Optional Flavorings: For extra variation, try adding cinnamon, ginger, or lemon zest to the peach mixture before blending.
  • Storing: To store, place the peach fruit leather rolls in an airtight container in a cool, dry place. Make sure the container is well-sealed to prevent moisture from softening the fruit leather over time.

  • 4 peaches, pitted and cut (approximately 4 cups cut peaches)
  • 3 tablespoons maple syrup
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Wash, Pit & Cut Peaches: Wash the peaches thoroughly under cold water. Remove the pits and cut the peaches into small pieces. You may peel them if desired (peeling gives a smoother texture, but it’s optional and based on personal preference).
  2. Combine Peaches & Honey in Blender: Place the peach pieces into a high-speed blender or food processor. Add the honey. If you like, you can also add a splash of lemon juice to help preserve color and add a hint of brightness.
  3. Blend Until Smooth: Blend the mixture on high speed until completely smooth and uniform in texture. Pass the peach puree through a fine-mesh sieve to ensure there are no chunks or unblended pieces left.
  4. Preheat & Line: Preheat the oven to 175F (80C) and line a large baking sheet with a silicon baking mat (silpat).
  5. Spread Peach Puree on Baking Sheet: Pour the puréed peach mixture onto the mat and use a spatula to spread it evenly across the surface. Aim for an even thickness of about 3–4 mm. Avoid spreading it too thick, as this will cause uneven or overly long drying times.
  6. Dry Peach Mixture in Oven: Place the baking sheet on the middle rack and let the pureed peach mixture oven dry for about 7 to 8 hours. The final texture should be firm and slightly sticky to the touch, but not wet. It should feel flexible and leathery.
  7. Let Fruit Leather Cool: Remove the tray from the oven and allow the fruit leather to cool for a few minutes. It should come off the silicone mat easily once cooled slightly.
  8. Cut into Strips and Roll Up: Cut the fruit leather into strips about 1–2 inches wide. Roll them up, either on their own or with parchment paper.
  9. Store: Store the rolled peach fruit leather in an airtight container in a cool, dry place. Make sure the container is well-sealed to prevent moisture from softening the fruit leather over time.

Notes
