Recipe Notes + Substitutions:

  • Ham: You can use either a bone-in ham or picnic ham.
  • Veggies: For the vegetables, I used onion, celery and carrot to create the broth that the ham cooks in. Feel free to add in other types of veggies if you prefer.
  • Spices: I used a mix of whole peppercorns and whole allspice berries to flavor the ham. However, feel free to add other spices such as star anise or a cinnamon stick if you prefer.
  • Herbs: I like thyme and rosemary for flavoring, but go ahead and add in other fresh herbs (such as parsley, oregano, etc.)
  • Honey-Mustard Marinade: Yellow mustard or Dijon mustard will work. Raw honey is best. If you don’t have demerara sugar, you may also use dark brown sugar instead. Alternatively, if you prefer not to make the marinade, you can simply use 4 tablespoons of store-bought honey mustard to replace the honey and mustard instead.

How to Make Slow Cooker Ham (Step by Step):

1. Combine Ham, Veggies, Spices & Herbs in Slow Cooker

Place the ham, onion, carrot, celery, whole peppercorns, whole allspice, fresh thyme and rosemary in a slow cooker.

2. Slow Cook Ham

Pour in enough water to cover the ham. Cover and cook on the high setting for 2 hours (or the low setting for 4 hours).

3. Let Cool Before Trimming Fat

Remove the slow-cooked ham from the broth, and let it cool slightly. Trim the skin and excess fat, leaving a thin layer. Use a sharp knife to score the surface of the ham into squares.

4. Mix the Glaze Ingredients Together

Place the mustard, honey and demerara sugar in a small bowl. Mix thoroughly to combine.

5. Preheat and Line

Preheat the oven to 380F. Line a large baking dish with aluminum foil.

6. Brush Ham with Half of Glaze and Bake

Spread half of the honey-mustard glaze on the ham and place in the prepared baking dish. Bake for 15 minutes.

7. Spread with Remaining Glaze and Bake

Spread the remaining honey mustard glaze on the ham and bake for another 20 minutes.
