Easy Potato Bread

Potato Bread INGREDIENTS

Ingredients:  -mashed potatoes -eggs -warm water -sunflower oil -GF all-purpose flour -xanthan gum -psyllium husk powder -salt -instant yeast -sugar 

Step 1:  Grease an 8" by 4" loaf pan with oil.

Step 2:  In a large bowl, sift the flour, xanthan gum (if using), psyllium husk powder, instant yeast, and sugar. Whisk well to combine.

Step 3:  Process the mashed potatoes and eggs in a high-speed blender until you get a thick, creamy yellow mixture.

Step 4:  Transfer the mixture to a large mixing bowl. Add water and oil and mix well to get. a pale yellow liquid.

Step 5:  Add dry ingredients to the bowl with wet ingredients and mix well until you get a homogenous sticky dough.

Step 6:   Transfer the dough to prepared loaf pan use a wet spatula to smooth out the top of the dough.

Step 7:   Cover pan with kitchen towel and let rise in a warm, draft-free place like the microwave for 40 to 50 minutes, until doubled in size.

Step 8:  While dough is rising preheat oven to 350F and place rack in center position.

Step 9:   Bake until the top of the bread is golden brown and the loaf sounds hollow when tapped.

Tips/Tricks:   *Substitute mashed sweet potatoes. *Xanthan gum is the replacement for gluten and helps everything bind together. If your GF flour doesn't have it, make sure you add it in.
