Finally, the sun is out shining again. I’d never thought I’d be so happy to see the sun rays peeking through my window shades this morning.
But after the past week of non-stop rains and chilly winds, I’m definitely overjoyed that the sky is clear again and that the sun has decided to appear at last.
When we were on our way home from a gym class we attended on Sunday evening, I mentioned to Juan how it was starting to feel like we were really local.
In the last one month since we arrived, we’ve come to recognize the cashiers at the local Trader Joe’s we have a block away from home; we’ve learnt how to navigate DC’s old but trustworthy metro system; and we’ve even started making friends with others in the city (the best part!!).
I’ve always loved this part of the process of getting to know a city – the foreign things that start to feel familiar and normal; like the blooming of a new friendship when both parties are just beginning to get comfortable with each other, but there’s still enough mystery to keep the relationship intriguing.
While September was a month of settling into our new home and trying to figure out how we fit in, October seems to be a month of fostering new bonds and meeting friends both old and new.
We’re also planning to squeeze in a visit to New York this month (finally!), and I’m so crazy excited to be in the Big Apple at last.
My friend Maria commented that I looked so happy in a photo I’d posted, and it’s true.
Life’s immensely good, and I am ridiculously happy.
It’s a great luxury and a God-given blessing to be in a place where I’m doing what I love best every single day, and it helps to have the motivation and inspiration to keep on running. I’m loving this freelance writing lifestyle tremendously – this is what it feels like when you know you’re doing what you were born to do.
I wish everyone had the opportunity to feel this way too.
Today I wanted to share a simple but healthy dish – one that can be made in a jiffy with real, wholesome ingredients that is bursting in taste and flavor.
Here’s a pan full of zucchini noodles (made with my favorite julienne peeler) tossed in soy sauce-seasoned minced meat and beautiful mini heirloom tomatoes.
It’s still reminiscent of the summer that has just slipped away, and I’m holding on to summer by eating vibrant, fresh summer zucchini noodles and colorful heirloom tomatoes (look at those colors!).
The recipe is really meant for two people, but I was very hungry and finished up the entire pan (but it’s low-carb so I don’t feel guilty at all!).
I guess you can tell how much I liked it.

Zucchini Noodles with Minced Beef & Mini Heirloom Tomatoes

Description
This is a refreshing, vibrant and beautiful dish made in under 30 minutes – zucchini noodles tossed with minced beef, a drizzle of soy sauce and mini heirloom tomatoes.
Ingredients
- 2 large zucchini, sliced into noodles with a julienne peeler
- 1/4 pound minced meat (I used beef but you can use pork, turkey or chicken)
- 1/4 pound mini heirloom tomatoes, cut into halves or quarters
- 3 tablespoons of gluten-free soy sauce (tamari), separated
- Salt and pepper to taste
- Chopped fresh parsley, for garnishing (optional)
Instructions
- Marinate the minced meat with 2 tablespoons of soy sauce and a pinch of salt
- Heat up a bit of vegetable oil in a large pan, and stir-fry minced meat until browned and cooked through.
- Toss zucchini noodles in the pan with the meat, drizzle 1 tablespoon of soy sauce over and mix until noodles are just cooked and meat is evenly distributed.
- Add salt and pepper to taste.
- Divide zucchini noodles evenly into two plates or bowls, top with sliced mini heirloom tomatoes and serve.
