These 5-ingredient banana flaxseed waffles are a delicious combination of sweet, ripe bananas and ground flaxseed, mixed in a batter of just five ingredients, and made into crispy waffles.

It’s been a whirlwind of a year so far. 

Where did January go?

I’ve barely had any time to sit down and take a deep breath, and now that I’m here, typing away furiously and trying to collect the mess of thoughts that has cluttered in my head – I’m finally realizing that we’re already in February.

February means so many things: the start of the second half of summer, which signals increasingly shorter days, frantic summer sales, the approaching Valentine’s, and the one thing I’m most excited about – heading home.

It’s been almost two full years since I last stepped on homeground – which for me will always be Singapore.

The last time I visited, it was in February 2013, which seems like an eternity ago.

Back then, I remember cooking up a reunion dinner for my extended family, eager to show them the cooking skills I’d finally acquired, and celebrating Chinese New Year with my loved ones. I also remember heading to Australia with my family, where we rented a large beach-side house that was our comfortable shelter during an entire week. In between all these, there were coffee chats at Siglap, long conversations at Holland Village, shopping sprees at Orchard, brief lunch encounters at Raffles Place and more dinner appointments than I can recall.

In the short three weeks that I last spent back home in Singapore, I’d crammed so many things into my schedule, squeezing in one appointment between every other two, afraid to let time fly by. 

I understand why I did so then.

Yet I’ve realized that maybe it’s not worth it to try to do so many things, or meet so many people. It’s hard to fit an entire year’s worth of updates into lunch-hour coffee meet-ups with friends; and even tougher to say yes to everyone who demands an appointment.

Life requires us to determine our priorities and to set our sights on the most important things.

And I know that while the planner in me wants to maximize every single minute, it’s time to start learning how to let go.

In trying to clear the clutter that’s in my head – a jumble of to-do lists and 2015 resolutions – I have to admit and accept that I am not a superwoman with an infinite source of energy.

What I do have though, is the power to decide what I want to focus on and where to put my attention. (Don’t get me wrong – I’m not trying to be arrogant; I just know that if we don’t put our big priorities first, we’ll never give them the effort and time they deserve.)

5-Ingredient Banana Flaxseed Waffles

I will have three full weeks in Singapore this March, which really means 21 days, or rather, 504 hours, or 30,240 minutes.

In that time, I aim to spend alot more time with my family, in particular my parents, my siblings, and my grandparents, whom I should really be calling a lot more. After my mum’s heart attack last Christmas, I know more than ever that I need to treasure the moments that we have together.

I don’t say it often and I don’t say it enough, but my family is truly the one thing that I hold dear, and I plan to dedicate alot of time to them when I’m back visiting this year.

I want to reconnect with the friends who have made the effort to keep in touch with me despite the distance and the time (you know who you are); and to meet up with a couple of new friends with whom friendships may have blossomed thanks to this blog.

During my time back home, I also hope to re-discover Singapore, my beloved country whose face is constantly changing and updating itself. I want to see the Lion City through my lens, as a citizen-turned-tourist, and to uncover parts of Singapore that makes it unique. Sometimes it takes living overseas to bring out the nationalistic pride in me, and five years in Argentina, whose people have such a strong and permeating culture, is enough to make want to see that side of Singapore.

I think these three big blocks of priorities will keep my hands pretty full.

My mind is clearer now, as it always is after I pen down my thoughts.

5-Ingredient Banana Flaxseed Waffles

I’m bringing you banana flaxseed waffles today – a delicious combination of sweet, ripe bananas and ground flaxseed, mixed in a batter of just five ingredients, and made into crispy waffles. 

Waffles, along with pancakes, are the sort of breakfast items that I break out whenever I have the luxury of time during the weekends. Because these waffles take time, it’s best to make them on lazy Sunday mornings, standing at the kitchen counter when you’re still in your pjs.

Let’s just say that these are waffles fit to impress. It was worth it waiting for them to cook in my waffle iron.

All it takes is a mere five ingredients – eggs, bananas, greek yogurt, ground flaxseed and baking powder – mix them all together with a dash of patience – and pour them into your waffle iron and wait.

Now you’re ready for a power breakfast. Enjoy!

Description

A delicious combination of sweet, ripe bananas and ground flaxseed, mixed in a batter of just five ingredients, and made into crispy waffles.


Ingredients

Scale
  • 4 eggs
  • 2 medium-sized bananas, mashed
  • 1/2 cup plain greek yogurt
  • 1/2 cup ground flaxseed
  • 4 teaspoons gluten-free baking powder
  • Sliced bananas, for topping
  • Honey or maple syrup for drizzling

Instructions

  1. Combine eggs, mashed bananas, greek yogurt, ground flaxseed and baking powder in the bowl of a food processor or blender
  2. Blend until you get a homogeneous mixture
  3. Let mixture sit for a few minutes
  4. Pour batter into the waffle maker, making sure to cover almost 90% of the entire surface area
  5. Let batter cook until your waffle maker indicates that the waffles are done (or until no more steam is emitted from the waffle maker)
  6. Serve with sliced bananas drizzled in honey or maple syrup

Notes

Tip: to keep the waffles crispy while the other waffles are cooking, turn the oven on to 300 deg. Fahrenheit (150 deg. Celsius) and place the waffles on an oven-proof dish in the middle rack until all waffles are done.

    Hi Felicia! I know exactly how you feel. I remember months leading up to my trip to Korea last summer – my to-do lists got wayy out of hand and the bags under my eyes became permanent. But you are absolutely right. You do have control over what you want to focus your attention on. You can’t do it all no matter how much you want to believe that to be true. I still struggle with that though.
    I hope you have a wonderful time with your family, and I can’t wait for you to share about your trip..re-discover Singapore..love it!!

      Min!! 🙂 So so happy to see your comment early in the morning! Missed you so much my dear friend! I know what you mean about all the to-do lists! I think I’ll be in a frenzy in the next two weeks as I pack and get ready to go back to Singapore (still hasn’t quite hit me yet – but in exactly 14 days I fly back!!!!) Can’t wait to be back home and spend time with my mum (she had a major heart operation in January and I really want to treasure the time we spend together!). Will definitely share about my trip back home – and rediscovering Singapore!!

    brimming with excitement as I read this. (btw, i love all your banana wheat-free recipes!) i am trying to cut out wheat and gluten but i find it difficult to completely eliminate it. your blog has however, inspired me to be more mindful and to choose healthier alternatives!
