Recipe Notes + Substitutions:
- Ground Chicken:Â Since this is a recipe for chicken meatball soup, ground chicken is a key ingredient. You can either buy storebought ground chicken, or process skinless boneless chicken thighs or chicken breasts in a food processor until you get a homogeneous ground chicken.
- Potatoes: I recommend using Yukon gold potatoes because they hold their shape after cooking while adding a creamy texture.
- Angel Hair Pasta: I used gluten-free angel hair pasta to keep this recipe gluten-free. If you are not Celiac or gluten-intolerant, you can use regular angel hair pasta instead. Alternatively, you can either leave out the pasta altogether, or use another type of pasta that you prefer.
- Vegetables: I’ve used a mixture of sautéed onions, carrots, celery and garlic for flavoring the soup. Feel free to use other types of vegetables if you prefer.
- Broth: In the recipe above, I’ve given instructions for how to make your own homemade chicken broth, but for convenience you can use store-bought chicken broth instead. Alternatively, you can also use chicken stock if you prefer.
How to Make Chicken Meatball Soup:
Prepare Chicken Broth:Â If making homemade chicken broth, place the chicken pieces, onion, carrot, celery, parsley, bay leaves, and peppercorns into a large pot. Cover with water and simmer on low heat for 30 minutes after boiling.
Sauté Veggies: While the broth is cooking, sauté chopped onion, carrot, and celery in olive oil for 4–5 minutes in a deep pan. Add garlic and cook for another minute, stirring.
Strain Broth:Â Strain the broth through a fine sieve. Remove the meat from the bones and set it aside for another dish (or you can also shred the chicken meat and add it to the soup).
Pour Broth into Pot: Return the strained homemade chicken broth to the pot with the sautéed vegetables. Add diced potatoes and cook for about 20 minutes.
Season Ground Chicken: Mix ground chicken with half the salt and pepper. For juicier meatballs, you can add a bit of finely chopped onion.
Shape Ground Chicken into Balls:Â Use wet hands to shape the meatball mixture into small 2-inch meatballs. (To make it easier, you may also use a small cookie scoop to scoop out balls of the mixture.)
Add Meatballs to Soup & Cook: Add the uncooked meatballs to the pot with the broth, and the vegetables. Season with the remaining salt, pepper, and optional herbs or spices. Add gluten-free angel hair pasta during the last 5 minutes of cooking.
Serve & Enjoy: Serve the chicken meatball soup hot, garnished with fresh herbs.
Dish by Dish Tips:
- Pasta: I’ve added gluten-free angel hair pasta to make the soup more filling, but you can always use other types of small gluten-free pasta shapes instead. Alternatively, you can remove the pasta directly, or add cannellini beans for a heartier soup, or serve the soup with a bowl of fluffy white rice instead.
- Use Other Ground Meat: if you prefer, you can also use other ground protein (think ground turkey, ground beef, ground lamb) for different types of meatballs.
- Accompany With: You can serve this soup with slices of crusty gluten-free bread, gluten-free breadsticks, or gluten-free crackers.
- Make it Asian-Inspired: For a more Asian flavor palette, you can add in freshly grated ginger and a splash of gluten-free soy sauce (tamari sauce).

Ingredients
For the Chicken Broth (If Using Homemade):
- 2 pounds chicken (any parts)
- 1 onion, roughly chopped
- 1 carrot, roughly chopped
- 1 celery stalk
- 2–3 bay leaves
- 4 allspice berries
- 10–12 mixed peppercorns
- 1 small bunch fresh parsley
For the Chicken Meatball Soup:
- 1 pound ground chicken
- 3 medium potatoes, peeled, diced
- 1/2 cup gluten-free angel hair pasta
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 2 garlic cloves, minced
- 1 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups chicken broth
Instructions
