Delicious Chicken Patties
Get ready for your new favorite snack, appetizer or even main dish! These delicious gluten-free chicken fritters are super easy to make and taste amazing!
Perfect with a gluten-free hamburger bun, or simply with a side of fresh greens, but most importantly, with your favorite dipping sauce.

Recipe Notes + Substitutions:
- Chicken: I used chopped chicken breast meat for this gluten-free chicken patty recipe, but you can use chicken cutlets or boneless chicken thighs instead. Alternatively, you may also use ground chicken if you like the patties to have a more uniform texture.
- Ground Coriander: I like adding a bit of ground coriander for flavor, but you may also use other spices instead (such as ground cumin, curry powder or garam masala).
- Granulated Garlic: I love the taste that granulated garlic adds to these gluten-free chicken burgers, so I recommend that you definitely add this in. You may also use garlic powder or dried minced garlic. Alternatively, you can also use very finely minced fresh garlic if you prefer.
- Dill: I like the taste that fresh dill imparts, but if you’re not a fan of dill, go ahead and use fresh parsley, cilantro, spring onions or chives instead.
- Egg: The egg helps to bind the ingredients together. If you wish to keep this recipe egg-free, you can try substituting the egg with acquafaba or an egg-replacer.
- Mustard: I used Dijon mustard, but you can use yellow mustard or honey mustard too if you prefer.
- Mayonnaise: I used regular mayonnaise but you may also use egg-free mayonnaise if you prefer.
- Cornstarch: Cornstarch acts as a binder for the ingredients, but you can also use tapioca starch, arrowroot starch, rice starch, rice flour or gluten-free all-purpose flour instead. Alternatively, if you are not Celiac or gluten-intolerant, go ahead and use regular flour instead.
- Oil: I like using sunflower oil because I always have a bottle of it on hand. However, you can also use another vegetable oil instead (such as canola oil, olive oil, avocado oil, or coconut oil).
How to Make Gluten-Free Chicken Patties (Step by Step):
1. Combine Chicken, Spices, Dill and Egg
Put the chopped chicken breast in a bowl, add salt and spices, as well as chopped dill and an egg. Mix thoroughly.
2. Add Mayonnaise and Mustard
Add mayonnaise and Dijon mustard to the mixing bowl and mix again.
3. Add Cornstarch
Add cornstarch and mix thoroughly, breaking up any lumps.
4. Let Chicken Marinate
Cover the bowl with cling film and let rest for 15 minutes in the refrigerator.
5. Stove Top Method
Heat vegetable oil in a frying pan. Spoon out 1/4 cup of chicken patty mixture and fry over medium heat for 4 minutes (you should be able to cook 2 or 3 patties in a single layer at once).
Fry over medium heat for 4 minutes.
Flip Patties Over: Turn the chicken patties over and fry for another 3 minutes until golden brown, covering the pan with a lid. If desired, you can put the finished fritters on paper towels to absorb excess fat.
6. Air Fryer Method
To make air fryer chicken patties, line the air fryer basket with parchment paper and brush the parchment paper with frying oil.
Spoon out a small amount of chicken mixture for each patty and place on top of parchment. You should be able to fit 3-4 patties in the basket. Fry in air at 360F for 7 minutes.
With a spatula, flip the chicken patties to the second side and fry for another 3-4 minutes. Repeat until all the chicken mixture is used up.
7. Serve and Enjoy
Serve the chicken patties in a burger bun or alone, accompanied with your favorite dressing sauce.
Dish by Dish Tips/Tricks:
- Swap Chicken for Other Protein: Feel free to use other types of protein such as pork, beef, turkey or even fish if you like.
- Make Smaller Patties for Sliders: If you wish to eat these with slider buns instead of hamburger buns, simply make smaller patties instead.
- Additional Seasonings: I used ground coriander and granulated garlic to season these gluten-free chicken burger recipe, but you can also add in other seasonings (such as onion powder, chili powder, black pepper, Taco seasoning, Italian seasoning etc).

Ingredients
- 1 pound chicken breast, chopped into small cubes
- 1/2 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon granulated garlic
- 2 tablespoons chopped fresh dill
- 1 egg
- 2 teaspoons Dijon mustard
- 1 tablespoon mayonnaise
- 3 tablespoons cornstarch
- 2 tablespoons sunflower oil
Instructions
