Recipe Notes + Substitutions:
- Turkey Breast: I used skinless, boneless turkey breast. However, if you prefer, you can also use chicken breast if you prefer.
- Panko Breadcrumbs: I used gluten-free panko breadcrumbs to keep this recipe dairy-free. However, if you are not Celiac or gluten-intolerant, go ahead and use regular panko bread crumbs instead.
- Seasonings: To add flavor, I’ve used ground black pepper and granulated garlic. However, feel free to add other condiments that you prefer (such as onion powder, garlic powder, or even ground paprika for a kick of heat).
- Eggs: The eggs help to bind the breading mixture with the turkey meat, so make sure to include them in.
- Olive Oil: I used extra virgin olive oil, but you can also use other types of vegetable oil (such as sunflower oil, corn oil, avocado oil, etc).
How to Make Homemade Turkey Nuggets:
Pound Turkey Meat: Place the cut turkey breast pieces on a cutting board, cover them with plastic wrap, and gently pound with a rolling pin or meat mallet to flatten slightly until the pieces are evenly thick (this ensures that the nuggets cooks evenly). Season with salt.
Toast Bread Crumbs: Toast the gluten-free panko breadcrumbs in a dry pan over low heat for 3–4 minutes, stirring constantly.
Prepare Breading Mixture:Â In a large bowl, mix the toasted gluten-free panko breadcrumbs with ground black pepper and granulated garlic.
Dip Turkey Pieces in Egg:Â In a bowl, whisk the eggs and add the turkey pieces, making sure they are completely covered in egg.
Coat in Breadcrumb Mixture:Â Coat each turkey piece in the breadcrumb mixture after dipping it in the egg.
Place on Baking Sheet: Place the nuggets on a large baking sheet (or cookie sheet) lined with aluminum foil or parchment paper. Lightly drizzle with olive oil.
Bake Until Crispy: Bake at 375F (190C) for about 20 minutes until the nuggets are crispy and golden brown. Serve with your favorite dipping sauce.

- 1 teaspoon salt
- 1 cup gluten-free panko breadcrumbs
- 1/2 teaspoon ground black pepper
- 1 teaspoon granulated garlic
- 2 eggs
- 3 tablespoons olive oil
