With Thanksgiving and Christmas around the corner, I know there’ll be plenty of roast turkey for the holidays… which usually means plenty of leftover turkey that sometimes just stays at the back of the fridge until….the new year? 😂
Keeping that in mind, I decided that this time, we should have an intentional way to put all that extra turkey to use (so it doesn’t just sit in the lonely fridge corner)!
This easy turkey fried rice comes together quickly, makes a delicious post-holiday meal, and I know the whole family is gonna love it!

Recipe Notes + Substitutions:
- Oil: I used sunflower oil because I always have a bottle of it on hand, but any vegetable oil (such as canola oil, olive oil, avocado oil) will also work just as well.
- Turkey:Â This recipe uses leftover roast turkey (turkey breast is great, but any part is fine). Simply cut the cooked turkey meat into 1-inch cubes before using it. Alternatively, if you wish to make this with leftover roast chicken, that would work as well.
- Veggies: I used a mix of broccoli, green beans, green peas, onions and carrots. However, feel free to use the veggies of your choice (such as bell peppers, zucchini, etc).
- Rice: I recommend using cooked long grain white rice (preferably rice that has been cooked and left overnight so the rice doesn’t clump together) or cooked basmati rice.
- Soy Sauce: I used gluten-free soy sauce to keep this recipe gluten-free. However, if you are allergic to soy, feel free to use coconut aminos instead.
- Eggs: Eggs are important in this recipe because of the flavor and color, so I definitely recommend not skipping them.
- Garnishes:Â I used chopped green onions (aka. spring onions) for garnish, but you can also use chopped chives or parsley if you prefer.
- Storing: To store, place the turkey fried rice in an airtight container and store in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop before serving.
How to Make Turkey Fried Rice (Step by Step):
1. Cook Veggies & Turkey:
Heat the oil in a large skillet and begin frying the peas, broccoli, carrots, onions, and green beans. Once the veggies are cooked, toss in the cut turkey and mix.
2. Add Cooked Rice
Add the cooked white rice and stir gently. Continue cooking on low heat.
3. Add Gluten-Free Soy Sauce
After 3 minutes, pour in the gluten-free soy sauce and stir-fry the ingredients for another 3 minutes.
4. Cook Eggs
Push the rice mixture to the sides of the pan and make a well in the middle of the pan, then pour in the beaten eggs, and add a little salt.
5. Mix Well
Wait a couple of minutes for the eggs to cook, and then stir gently until the rice, veggies and eggs are evenly distributed.
6. Garnish and Serve
Sprinkle fresh chopped green onions over the fried rice and serve.

- Not a Fan of Turkey? If you wish to make this delicious fried rice with leftover roast chicken instead, that would work as well.
- Type of Rice: I recommend using cooked long grain white rice for this recipe, but if you prefer you can also use cooked brown rice or cooked quinoa instead!
- Optional Garnishes: Feel free to add a sprinkle of sesame seeds and a drizzle of sesame oil if you like.
